Lunch Box: Turkey Roll-Ups

By:   Mackenzie Schieck

As easy to make as a sandwich, but definitely more fun to eat.

Lunches come in all shapes and sizes--this one is all rolled up for giant lunchtime smiles.

What's for Lunch

Turkey, fat-free cream cheese, and a variety of delicious herbs are wrapped in a tortilla for an easy, portable lunch. Allrecipes highly rated Colorful Coleslaw with a Kick will fill the veggie void, and Caramel Crispy Treats II make for a tasty end to a filling meal. Serve with low-fat milk or water.

Lunch Box Logic

  • Make it spill-proof: wrap tightly in plastic, and underneath the plastic, wrap the bottom inch of the roll-up with parchment paper so nothing falls out when kids are eating. They can remove it for the last few bites.
  • Make ahead: all three recipes can be made the night before.
  • Make it healthier: add more veggies (shredded carrots, fresh spinach, etc.), and either use whole wheat tortillas, or make your own (see recipes at right).
  • Make it different: kids not big fans of coleslaw? (The kind that’s not drenched in mayo, anyway.) No problem! Swap it out with a fruit salad for a slightly sweeter finish.
