London broil

1. A FLANK STEAK that has been cut into large pieces, tenderized by marinating, broiled or grilled, then thinly sliced across the grain. 2. A term also used for various thick cuts of meat including SIRLOIN tip (see SIRLOIN) and top ROUND (see ROUND).

Can I use a lodon Broil for Steak in a sack or fajitas?

Joan - it is possible but you will want it VERY thinly sliced as it can be a tough cut of meat. I generally used sirloin tips for fajitas but on a budget london broil makes a passable substitute. I would suggest marinating it and then slow cooking it to make the meat as tender as possible. As an alternative you could use a pressure cooker.
