We just picked quite a few from a friend's garden and aren't sure how to cook them. Any suggestions???

Too many uses to mention. Much milder than ones in grocery stores. Peel,slice, season and bread with flour or bread crumbs,panko works good,then pan fry. Use for eggplant parmesan, with sliced fresh tomatoes instead of nasty jarred sauce,plenty of cheese, fresh basil and oregano and bread crumbs on top. Makes good mock oyster stew also.

I actually have a really cool breakfast recipe fort his eggplant. (1) Take the eggplant or how many you plan on serving poke with a fork from top to bottom and all the way around at least four pokes each side of the eggplant. Grill it until it becomes tender and skin become charred. (3) Beat 1 egg per eggplant while egg plant is cooking. when eggplant is tender remove from grill and peel skin off w/ fork, the skin should come off easily. (4) Stick eggplant in beaten egg and thoroughly coat. (5) In an Olive oil coated pan place eggplant(ONLY) cook one side, then flip and add the rest of the egg. Cook until eggs are cooked. This is a great recipe my husband loves it and everytime we go to Guam my mother-inlaw makes it for us YUMMY. You can add onions to oi before adding eggplant for flavor. This is essentially a whole eggplant omlet and you can adjust it as u will. HOPE U ENJOY IT

They are very good sliced thin 1/2 in lengthwise and roast in the oven with EVOO salt, pepper, and a pinch of oregano.
