She had me up until 'add 2 cups of chicken stock'. I was looking for a base recipe where you didn't need to add stock, you are suppose to be 'making' the stock.

Agree with Jayzee - needs more veggies. Would also like to see a cream of turkey soup recipe - I had this in a diner and it was out of this world. Would love to be able to make it at home.

This soup definately needs some vegetables and/or barley, rice,or pasta. It looks very bland and anything but a hearty home made soup.

There is nothing wrong with this recipe - it describes how to make a turkey soup from the carcass. Not turkey and rice or barley, not cream of turkey soup, but simple turkey soup. Yes, one could always add more veggies, including diced turnip (adds an unbelievable sweet taste to any soup), celery, etc. Anyone who has made this soup, realizes that the carcass itself does not quite give off an acceptable broth taste. Thus augment with spice cubes or chicken stock. Unless I missed it, it didn't say to pick the bones, although showed the end product.

My mom used to make turkey soup after Thanksgiving dinner. It did have rice, carrots, celery in it. No chicken stock! With a carass for a 20+ lb. bird you really don't need the chicken broth. Do I miss her soup.

I can't wait to try the recipe the only thing I would do differently is add some egg noodles.
