A Grecian Yearn

Bordered by azure seas, Greece is a country of steep, rocky terrain. Yet from unfertile soils emerged a cuisine of fresh, delicious simplicity.

Classic Greek Flavors

Like a tiny taste of the sun, a handful of classic ingredients typify Greek cuisine's fresh, vibrant flavors: olive oil, lemon, feta cheese, oregano and thyme. They give a burst of flavor to seafood, salads and vegetable dishes.


Bacchus and the Golden Mean

Olives and grapes grow in even the most inhospitable soils. For ancient Greeks, the simplicity of a diet based on these ingredients harmonized nicely with a philosophy of moderation: Too much wine causes grief, but so does too little.


    Grecian Formula

    A study completed in the 1960s gave props to the Cretan diet, noting the health benefits of eating plentiful fresh fruits and vegetables and olive oil as the primary fat. The study first showcased the health rewards of what today we call the "Mediterranean diet."

      hello Mom of 5, the pictured dish is "Souvlaki" the Greek equivalent of the American burger or the Mexican burrito (meat and toppings wrapped in dough). here's one of the several recipes posted here: "Sharon's Scrumptious Souvlaki" good luck to you! Mike

      Hi zoelov...I am greek yet i don't understand what you mean dy saying kablama...Could you describe this food so i can figure out what is all about and post the complete recipe?

      please tell me what vegetables go in a lamb gryo i love them, and i believe they are put on pita bread. please help so i can try to make them at home.. thank you so much and have a wonderful New Year.

      I am going to echo Mom of 5's question. What is the photo of? I know Greek Lover Boy answered that it's Souvlaki, but all the Souvlaki recipes call for chunked meat and the meat in the photo looks ground.

      Beef Kapama.For zoelov. 1 kilo beef 6 ripe tomatoes or 2 cans 16 0z each chopped up tomatoes 2 cups water 2 T olive oil 4 T butter 8 T red wine 3 of cinnamon stick Salt and pepper. Brown the meat in the oil and the butter, when is well browned add the wine and cook a 5 minutes , add the water,cinnamon,salt and pepper, cook for 80 minutes or until is well done . Serve with buttered lasagna. 4 servings

      joanne this is for u , iam greek so i let u know what goes in the gyro,u put tsatsiki : 1 cup sour cream , 1 teaspoon garlic minced ,dash of salt ,peel and shred 1 cucumber and squiz it so all the water comes out than stir in the sour cream add 2 tablespoons olive oil , 2 tablespoons of salat vinegar , try it if u need more salt put some whatever pleases ur taste buds , then u add some tomatoes and shredded letuce ,and perhaps some feta cheese and thats it .

      Joanne- if you are trying to mimic the lamb meat that you find in a Greek (Medi) restaurant, you will be hard pressed to do it well. I am not Greek but do cook quite a bit of Greek food. From what I understand the meat is a mixture of lamb and beef (I think). Chicken makes a good substitute, and sliced marinated beef would probably be ok too. DO NOT just use unseasoned meat. You will be sorely disappointed. Therefore, you can do one of several things. 1. visit your local Greek restaurant and buy just the meat. 2. Buy a shaker of Cavender's All Purpose Greek Seasoning (which is pretty good but has MSG). 3. try the recipe from this site called "Greek Seasoning" I haven't tried it, but it has great reviews and it looks pretty accurate. Happy "gyroing"! :)

      could anyone tell me what the greek pasty that is in a crispy rolled up form. crispy pasty with honey and maybe almonds. Last time I had it I was young, so I hope I am remembering it correctly.

      kassioskitchen -- I think you are meaning baklava. I've had several versions of it -- made with walnuts or pistacchios or almonds.

      hi I'm only 15 but i want 2 make a Greek dessert for class cause the month is November and that is when we r learning about Greece. so i thought it would b cool 2 make a Greek dessert! if u have any food 2 recommend just write back to tfht (me!!!)

      I thought that was a gyro in the picture. It looks delicious! Of course, the meat in it is most likely lamb, and I can't bear the thought of eating lamb. Lambs are so adorable! I can't believe with all the folks of Greek ancestry and the Greek food festivals we have in my area (Northeastern Connecticut) I've never eaten any Greek foods.

      Just found this site-- Alton Brown on Foodnetwork site has a recipe for gyro meat that is quite good and fairly easy. Give it a try.
