This recipe shows that you slice/cut up the squash without peeling. Is this correct? Most recipes call for peeling before cooking. Thanks.

If you don't have rum in the house do you think you could use more syrup and use rum extract?

So many people are nervous about cooking winter squash (the hard ones that last months when stored in cool dry spot). They are delicious. Push your self to try other varieties. The huge blue Hubbard is one of the tastiest. Find a foodie friend to share its immense size with. One of my favorite uses of Acorn is to slice thin, raw, and serve with all the other fresh veggies on a tray with dip. I love to cut in half acorn and buttrnut, clean out, and just fill with butter, brown sugar, and a few baking spices. Pick your favorites..cinnamon, nutmeg, etc. and bake. You can roast with evoo and salt pepper, garlic, then add to you favorite stuffing recipe. Add sausage and just serve this as the entree, with veg. and salad. I love squash. I want it for dinner...off to groc....
