Garam Masala

Description

Garam is the Hindi word for "warm" or "hot," and this blend of dry-roasted ground spices from the colder climes of northern India adds a sense of warmth to both palate and spirit. It can include black pepper, cinnamon, cloves, coriander, cumin, cardamom, dried chiles, fennel, ginger, mace and nutmeg. Garam masala may be purchased in Indian markets and in the gourmet section of some supermarkets.

I love this stuff, started using in other dishes something as simple as spinach and it will truly enhance the flavor.

I like to make my garam masala fresh in the bowl and mortor, and I use much smaller amounts as we are just a family of four. ;) I love that this is calculated so large groups / or / restaurant chefs can take a peek at a great garam masala... This is what I use in my cream / yogurt sauce for the lamb masala, so nice. Thanks for posting ;)
