Wow now I have a good variety of cupcakes to make. Someone told me I can make cupcakes with any cake including pineapple upside down cake I think I will try it with chunk or crushed pineapple next time I am asked to make that cake. I am getting lots of real good cakes too. Allrecipes.com seems to be the best for any recipes from scratch.

I've just printed off most of thee recipes and will bake them to give the youngsters at our local youth club. i know they will all be a big hit. I plan to make the frog cupcakes first. Fantastic site.

Linda54494 pineapple upside down cupcakes are awesome and I use crushed pineapple. They are the perfect serving size. I've made them for several social gatherings and they aer alwasy a hit.

Ready good information. I am having a problem with my cupcakes that I make from scratch. For some reason they always seem to comeout heavy instead of light and moist. HELP, what am I doing wrong?

I'm not sure exactly what the problem could be, but maybe you are measuring too much of one thing and not enough of the other. Take your time and measure everything almost perfect. You may not be adding enough flour, baking soda, and/or baking powder. Hope this helps!!! :) Happy Baking! april2899

I agree with April2899. It sounds like your balance is wrong. Your baking powder might be too old. I tend to use double acting baking powder becauseI have found it works better. I have also tended to use less baking soda and more powder.

i love all cupcakes no matter what flavor they are ! i think it is a way of showing a bit of your personality , by which one you like to eat or make , and if making them , how you choose to decorate them.! it is also an easy way for anyone to try out their artistic ability without being overwhelmed!!!!!!!!

Ronnie, when I want to fill cupcakes, I use a pastry bag with a long narrow tip. I bake and cool the cupcakes, then pipe the filling (jelly, jam, whatever) right into the center, through the top of the cupcake, before frosting. I like raspberry jam as a filling for either white or chocolate cupcakes : )

Anyone know if you can use a pound cake recipe to make cupcakes?

There's no reason you couldn't but just know they are going to taste like pound cake cupcakes. The main difference is the use of buttermilk or different kinds of milk and more eggs. But if you like pound cake then cupcakes would be just as good. You can also still make variations and changes to the recipe to suit your needs like adding cocoa powder for chocolate ones.

i'M GOING TO MAKE THE CUPCAKES FOR MY SON'S WEDDING RECEPTION, ABOUT 325. HOW LONG CAN I FREEZE THEM (UNFROSTED) BEFORE THEY START TO DETERIORATE IN TEXTURE, ETC. ALSO, I NEED A NICE FROSTING FOR THEM.

To be on the safe side.......freeze them and put them in an airtight container if you have one. They will stay for up to 2 months. I have actually left them in the freezer uncovered for a month and they were just fine. Only do that if you have a frost-free freezer.

When using AP flour, make sure not to overbeat. This will activate the gluten, making your cake or cupcakes heavy & bready.

In regards to freezing cupcakes...can you freeze cream filled cupcakes that are unfrosted?

I ned some imput or advice about batter amount or consistency when baking chocolate candy inside the cupcakes. My Reese's miniatures all sunk and stuck to the paper liner.

kakeihn in regards to baking with candy I usually put in about half the mix I would use for a cup cake then stir the candy bits into the remaining mix - have never used Reeses miniatures but would hope that would help keep them up - as it works for chocolate eclairs, cut into quarters baked into cupcakes - I use a good vanilla cupcake batter to start with too..
