she says to add 1/4 cup of butter but in the video, so put in 1/2 cup. I'm confused.

I wonder if she meant 1/4 of a lb. which is what 1 stick of butter would be.

One stick of butter equals 1/2 cup. What she put in was the right amount. She said 1/4 Cup. That happens once in a while. Good observation! Try 1/2 cup of butter and see if that works for you. -souperlady

Can dried cranberries be used? Should they be re-hydrated first?

Orange Cranberry bread 1. Pre heat oven to 350 degrees. 2. Lightly spray loaf pan with cooking spray. 3. In food processor on pulse mode, coarsely chop 3/4 pecan halves and then add 1/3 cup fresh cranberries to processor. set aside. 4. To a stand mixer add 1 stick butter (1/2cup), 2/3 cup sugar, zest of half an orange, 3 eggs, 1/2 tsp. vanilla. 5. Then add 1 and 1/4 cups flour and 1 1/2 tsp baking powder and 1/4 tsp salt. Add to stand mixer in three additions and 1 cup buttermilk in two additions. Mix until all is combined. 6. Now fold the cranberry nut mixture into the batter by hand. 7. Transfer the batter into the prepared pan. Bake until golden brown about 55-60 minutes. (until cake tester comes out clean.) For best results...Wrap in plastic wrap for 24 hours before slicing.

GUYS THIS RECIPE SHOULD ONLY BE 1/4 C OF MARGARINE. I DOUBLED IT WITH 1/2 BUTTER LIKE IT SHOWED TO 1 CUP BUTTER AND IT WAS BAKING IN A POOL OF BUTTER. SHE DID MEAN 1/4 BUTTER............ SHE JUST PUT IN TOO MUCH ON THE VIDEO...............

I MIGHT NOT HAVE MADE MYSELF TO CLEAR. I HAD TO MAKE A DOUBLE RECIPE, SO I PUT IN TWO STICKS OF BUTTER AND THE RECIPE COOKED IN A POOL OF MARGARINE. ONLY USE 1/4 CUP OF MARGARINE PER LOAF , NOT A STICK PER LOAF..................
