Cook Tonight – and Have a Great Lunch Tomorrow

I usually have breakfast and dinner at home, so eating healthfully twice a day is easy. But because I’m often out or working alone at lunch, making good food choices at that meal is more difficult. 

Over the years, I’ve discovered I’m less likely to reach for something I shouldn’t eat if lunch has been prepared ahead. Remembering to pack a lunch regularly, however, isn’t easy. But there is a solution: Make a little extra at tonight’s dinner for tomorrow’s lunch.

All three of the following recipes--a hearty soup, a slaw and chicken combo and piquant pasta--are full-flavored, substantial and satisfying, yet reasonable low-fat. And they can be microwaved and on your desk faster than you could run out and buy that slice of fattening cheese-and-sausage pizza.
