Chili Cook-Offs 2009

Whatever your preference--for chili verde or red chili, beef or beans--you'll find a new favorite chili at your local cook-off. The rules for the Chili Appreciation Society International (CASI) state, "NO FILLERS IN CHILI: Beans, macaroni, rice, hominy, or other similar ingredients are not permitted." Many regional competitions determine eligibility for the annual CASI cook-off in Terlingua, Texas--the epicenter of chili contests for more than forty years.

For a complete list of upcoming C.A.S.I. cook-off's go to www.chili.org I've been a cooking Competition Chili for more than 2 years and it is lots of fun and always for a good cause.
