How did anyone cook before canned tomatoes came along? They're an indispensable ingredient in our pantry. Added to soups, sauces, and stews--we just can't get enough!

Save fresh tomatoes for late summer. Picked and packaged during peak freshness, good canned tomatoes are often tastier than the sad, juiceless things we find in markets most of the year.

For Your Health

Forget “an apple a day.” Tomatoes are loaded with vitamins and have as much fiber as a slice of whole-wheat bread. Best of all, their cancer-fighting properties are enhanced by cooking.

Something from Nothing

Pantry's bare? Canned tomatoes are a terrific starter ingredient. Cook onions and garlic in olive oil, then toss in red pepper flakes and tomatoes for a simple but scrumptious pasta sauce.

We always had home-canned tomatoes from the garden when I was growing up. In the winter, my Mom would cube potatoes and onions with just enough water to cover, and slow boil until tender. She then added one quart of canned tomatoes that she simmered in another pot, and a Tbs of bacon grease for flavor. It soothed our winter chills. Today, I substitute packaged bacon bits for the 'grease' and a splash of olive oil along with plenty of garlic (mashed and boiled with the potatoes and onions). It's delicious and cures the sniffles.

I can my tomatoes all summer long. I can whole roma tomatoes with my fresh basil. I make pizza sauce and fresh salsa. I make stewed tomatoes and can them. I just love preserving tomatoes. I am so excited about preserving I leave my canner out all year. I can potatoes, cubed also. Homeade soups and chile and even chicken and dumplings without the dumplings of course.I remember my great grandma and grandma's garden and I remeber them canning.

Like Ann I love to can tomatoes! I remember learning to polka in the kitchen with my Grandma while waiting for jars to process, best memories! My favorite canning book (I call it my canning bible) is from Farm Journal and is at least 30 years old, but they reprint it now and then. Very detailed, great for both beginners and experienced canners and freezers, and has a ton of recipes for even unusual veggies, fruits and meats.

Picky Mom, my mother gave us the same when we were young - we grew up in cold MN. This was our favorite after ice skating at night - warmed us inside and out..wow, memories..thanks. I'm prayin' right now for cool weather...and a chance to reproduce this pot of memories..thanks!
