Brownies are the Best

Mmm...ooey-gooey, chocolaty brownies. You have to spoil the kids every once in a while.




Your mini chocoholics will clap and cheer. Minimal ingredients and simple preparation make brownies the perfect treat for kids' helping hands. So make an afternoon of it.


Chock-full of Chocolate

Once baked and cooled, serve brownies cut into reasonable, non-sugar high inducing sizes, or cut them into bite-size pieces and top with fresh fruit and/or frozen yogurt.

The Icing on the Brownie

There's something about chocolate frosting--you always want more! Get creative with the frosting process and let kids pipe their initials or different shapes (stars, hearts, etc.) on their brownies.

Does anyone know how to keep brownies in one piece? I always make homemade brownies, but for some reason they always become "scrambled brownies." I mean, they taste great, but they won't stay together. At first I thought I didn't use enough cooking spray, but when I almost drenched the pan in it they still wouldn't come out. Please help!

Erika, use parchment paper on the bottom of your pan. I use a glass pan rather than a metal pan. It is easier to remove cakes and brownies. I use spray if I am out of parchment paper.

Erica, if you use parchment paper and extend it over the edges of the pan it gives you handles to lift your brownies out in one piece. I always do this especially if I need to cut them to take to a church, office or friends potluck. Hope this helps.

Erica, using parchment paper will help with the baking of brownies and other pastries. However, when ready to cut brownies use a plastic knife..let brownies cool until you can touch the pan and then cut with the plastic knife..it works..

I line my brownie pan with foil. Extend the foil over the edge of the pan and the brownie will lift right out with foil. I find foil easier to manipulate than parchment paper.

Also, I find that sometimes adding more egg white can help in some recipes, without changing the taste.

I have a 13x18 pan that I want to make brownies in, to bring to work. Most of these recipes use a square 8" or 9" pan or a 13x9. Any suggestions or guidelines for increasing ingredients and baketime for this larger pan size? Thanks!

I couldn't find a similiar recipe on this site, but in my opinion the perfect brownie recipe is "Andrew's Brownies" on epicurious.com. They're chewy and fudgy inside and crisp and crackly on top. I add a little cocoa powder and bake in an 8" square pan for 20 minutes.
