Thanks for the positive comments! I'm a little confused by people saying they are dense.. they are supposed to be!! These aren't the light, tasteless buns you get from the grocery store. These are hearty, ethereal and hold up to any burger. Try not to over knead these and only enough flour so that it is sticking to the bottom of the mixing bowl, but clear of the sides. I do use a hamburger bun pan that I bought from King Arthur flour years ago... great tops to these, but they turn out just as nice on a large cookie sheet. I too use a yolk/water brushing and add sesame, poppy or a bit of sea salt.
