Five Minute Ice Cream

Wow, very yummy! I used frozen peaches and it was delicious! It was more of a smoothie texture, next time I will try freezing it for 30 min at least :) I blended the peaches in my blender, took a little work but was well worth it and pretty fast!

Baked Asparagus with Balsamic Butter Sauce

Four Cheese Macaroni

Followed the recipe exactly. First time I've made a true-baked mac & cheese dish and it turned out great. I didn't tweak the recipe at all. After heating some of it up later on, I noticed the macaroni doesn't take on as cheesy of a texture in the middle as it did after baking. Maybe that's just a macaroni and cheese thing, I don't know. Nevertheless, this one's going in my recipe book for sure!

Southern Potato Salad

Yes, yes! Oh yes! This potato salad will most likely knock your socks off. After Retired Cook said has made this for over 50 years, I decided to adopt the tips, adding 1 tbsp cider vinegar; 1 tbsp sugar. I used six eggs instead of four because I like them, using the last two eggs to garnich the top of the salad with along with a sprinkling of Paprika. I'm not a sweet relish fan and didn't have any on hand, so I subbed out a 1/4 cup relish with 1/4 c diced pickles and 1/4 c diced onion, giving the salad a more crunchy texture, which is what I was aiming for. I also added a diced fresh jalapino in the mix for spice. One of the keys to this could be getting the proper amount of potatoes mixed in with the rest of the mixture so there is a nice even covering. Thank you!

Saucy Herb Hamburgers

This turned out very flavorful and moist. I will add it to my recipe book under the title, "Meatloaf Burgers." I didn't have any tyme. Other than that followed the recipe exactly, toasted a french bun for it and added a couple dabs of the sauce on the cooked burger. I tried to flip the burger a few times to keep basting while cooking and this wasn't a good idea. The patties crumbled a little bit because of this. Next time I may flip just once and cook covered to reduce cook time as well. I also added a minced fresh jalapino to give it a little extra kick. Great recipe. Thanks!

Tom Yum Koong Soup

Definately 5 stars, I don't care for shrip so I used diced chicken breast instead, couldn't find kaffir lime leaves so I zested my limes, and I couldn't find sliced galangal, so I didn't worry about that. Also, I didn't have chili paste but I did use Tom Yum Soup Paste. Was VERY delicious! My oldest daughter loved it and wants it again tonight!

Chantal's New York Cheesecake

If I could give this more than 5 stars I definitely would! This was my first cheesecake and it turned out WONDERFUL! I served it to a group of ladies at my house and they all thought it was store bought, they didn't believe me when I said I made it! They just raved :) I did cheat a little though...I used a graham cracker pie crust since I didn't have the graham crackers or spring-form pan. Such a simple yet elegant recipe, I will definitely make this over and over!

Groovie Smoothie

This is much simpler than the last smoothie I made, but oh sooooo much better! I used fresh instead of frozen berries, and strawberry yogurt since someone ate my vanilla!!! Was very yummy and will be my staple food for the next few days since I just had a wisdom tooth pulled!!!

Kielbasa and Potato Bake

Flourless Chocolate Cake II

Didn't expect it to be so thin, but very chocolatly and very good. Didn't use cocoa powder, just 2 chocolate bars. Also, was a sinch to get out of the pan since I put a circle of wax paper on the bottom, I highly suggest doing that.

Simple Whole Roasted Chicken

World's Best Potato Salad

I didn't have onions or celery (don't really care for either anyway...) and I didn't have the evaporated milk so I used whole milk instead...I think it made it a little thinner of a dressing, but oh so good! Both of my daughters loved it, they wanted a second bowl right away! Thanks for the great recipe!
