Stabilized Whipped Cream Icing

I read through a ton of these reviews and felt I was making an informed decision when I opted to use the 2 tsps of gelatin rather than the 1 tsp called for. I certainly got a nice firm whipped topping that piped onto my 4th of July Strawberry Trifle. Too firm actually, it was reminiscent of caulking and not the soft, gental peaks of cream I was hoping for. Next time I'll know better.

Penne Pasta with Spinach and Bacon

Really delicious and very easy for those quick, gotta get it on the table dinners. Used whole wheat penne, and tossed in some Kalamata olives at the end. Also added a little dried basil and oregano.

Low-Fat Blueberry Bran Muffins

Made a modified version of these delicious and successful muffins on my blog. Substituted bluberries with plums, made the flour 100% whole wheat, added soy milk instead of normal milk. Worked out just GREAT! Thanks!!!
