Baked Teriyaki Chicken

Reviewed: Aug. 8, 2008
I had to give it 4 stars because I did have to alter it. But all in all this is a great marinade. I have baked my chicken and also BBQ with it. Basically I triple the recipe and use 1/2 cup less soy sauce. I make up the sauce pour 1/3 to 1/2 in a dish to baste the chicken (depending on the ammount of chicken) and use the rest over rice and veggies. What a great meal.

Ali's Greek Tortellini Salad

Good recipe. Fun flavor. Will add to my monthly rotation. Might be a little strong on the onion flavor.

Filet with a Merlot Sauce

Reviewed: Aug. 2, 2008
Made the sauce as stated but cut in half. We grilled filet mignon's on the grill and topped with the sauce. Made it about a month ago and just got around to reviewing it as i'm making it again tonight and needed to come look up the recipe and much to my bewilderment realized i never did the first time! My husband and I have been craving it again ever since and this will be a staple around here and most surely will use for entertaining! Thank you!

Spring Lime Tea Cookies

Reviewed: Jul. 26, 2008
Love this recipe. Easy to make. Pretty much followed the recipe, but I added more lime juice [based on other comments] and had to use orange zest instead of lime. Really tasty--they went so quickly that this time I have to double the batch.

Coconut Curry Tofu

A wonderful recipe! Has become one of our staple dinners. We like to serve it with flour tortillas, to help cool the heat a little and because it was the closest we had to naan the first time we made the recipe.

Swimming Angels

Reviewed: Jul. 18, 2008
Well, I put the sauce over chicken with broccoli and mixed peppers. And decided to chop some peanuts and sprinkle over the top to garnish. But the main part of the recipe was really the sauce. And man was the sauce fantastic! Might try the tofu and spinich at some point (couldn't last night cause my mom won't eat tofu) but this was the best peanut sauce I've ever had. My family raved!

Easy Crabmeat Enchiladas

A good base recipe. I followed suggestions and my final product barely resembled the original recipe. The result was fantastic, but I personally couldn't do this one as is.

Restaurant-Style Coleslaw I

Reviewed: Jul. 10, 2008
So great! Have made this twice in two weeks and took a double batch to a 4th of July party. My husband says this is the best slaw he's ever had. It's really good. the first one we ate right away, the second one was in the fridge for all day and it really didn't taste much different. I added celery seed and it made the whole salad. Will make this many more times to come.

Mexican Corn on the Cob (Elote)

Reviewed: Jul. 2, 2008
My brother has been eating corn like this for years since his neighbor who is Mexican introduced it to him. Since he's raved about it for years, i decided it was finally time for my family to give it a whirl. So, the result is that this is most likely the ONLY way we'll eat corn on the cob ever again! My 9 yr old son who despises mayo, ate his corn so fast, it was all over his face! When I told him there was mayo on it, he said he'll only eat it on corn. So delish, i can't even explain. Going to have to make sure all summer that I have Cojito cheese on hand! Can't wait to try it with our corn from the garden!! :-)

Banana Banana Bread

Reviewed: Jun. 30, 2008
I've tried several different banana bread recipes...this one is by far my favorite! I added some cinnamon, nutmeg, and vanilla and threw in a handful of raisins....it was fabulous! My fiance, who isn't really a big banana fan, ate 3/4 of the loaf by himself the first day!

Roasted Rack of Lamb

Reviewed: Jun. 27, 2008
I also used a Costco 8 rib rack and seasoned it with the basics;rosemary thyme, garlic and served it with homemade mint sauce, new nugget potatoes and a beautiful organic salad.I also added 2 cans of Bavaria beer (Holland by design) which made the cooking time seem to be less. The dinner was fit for me and that`s what counted.5 stars and a keeper.
