Parmesan Baked Potatoes

I tried this tonight. I didn't have red potatoes so I used a single large russet baker halved and cubed. I wasn't to excited about it because it was quite dry, but will try it again with red potatoes to see if it is moister than with the russet. Next time I may put some foil over the dish and then crisp it up under the broiler to finish it.

Simple Whole Wheat Bread

Very good bread. I was approached to trade a loaf of home made bread for a dozen home grown fresh eggs. Such a deal! I ask what their taste was and all they wanted was whole wheat sandwich bread for left over turkey! I made this recipe and they loved it and said to be sure to let them know when I needed more eggs! This was a very easy bread to do and the size (3 loaves) fit my baking stone perfectly. This will go into my rotation for sure!

Phyllo-wrapped Halibut Fillets with Lemon Scallion Sauce

Halibut is typically mild and can dry out easily when baking. We readily have available fresh pacific northwest halibut and I get tired of the same ol' dill/mayo/butter recipes. This one was A KEEPER! What a great way to keep in the moisture, and add an alternative flavor. Thank you!

Clone of a Cinnabon

Good cinnamon bun recipe. In order to get the "Cinnabon" texture I believe you have to undercook these. I don't care for cinnabons, so I cooked these fully and yes - they were delish just as a regular cinnamon bun!

Sicilian Homemade Ricotta Cheese

Wonderfully easy recipe and fun to make. Very mild flavor, and a bit dryer than store-bought ricotta, but perfect for anything you make with cheese as the ricotta simply absorbs the flavor of whatever dish you're putting it in. We made quesadillas, burgers, casseroles, etc...and the cheese was a perfect substitution for all other expensive cheeses we would've put in. Very pure, low-salt, mild flavor, and we ate onit for well over the week expiration. Keep in an air-tight container and it will last for almost a month!

Overnight French Toast II

I made this for Christmas morning last year and although it had good flavor, it was a bit dry if you are using a full loaf of store-bought french bread. This year I made it for a brunch and added EASILY five more eggs and half cup of milk. Turned out PERFECTLY moist and fully baked. Not dry bread on top! got rave reviews!

Corned Beef and Cabbage I

Made this for a dinner party of six tonight and turned out tasting good but even after cooking for almost 4 hour at 200* the meat just wasn't as tender as I'd hoped it would be. I will try it again and see if it gets any better.

French Bread Rolls to Die For

I made these tonight to go along with the Corned beef and Cabbage I, from this site. I followed the recipe and the only thing I did different was to bush a little butter on top after they came out of the oven. I was a little worried when I ate one before the company got here as it tasted a little bland and thought about what some of the reviewers said about increasing the salt but during the dinner, everybody was raving about the rolls and sure enough when you added regular salted butter to the rolls they became amazing! Will use this recipe again!

Turkey Brine

i double bagged and brined my 18 lb turkey in the reynolds wrap oven bag and it leaked!!. luckily i had chosen to empty out the bottom drawer of my fridge (the drawers for veggies/fruits) and stuck the bag in there, otherwise there would have been liquids all over the inside of my fridge instead of contained inside the bottom drawer.

This is a super yummy and EASY recipe! I served it at a family dinner and everyone loved it. Next time, I might try a cheesy top instead of the crumb top. I made the recipe exactly as directed, and sprinkled some Parmesan cheese on top. Dee-lish! We'll definitely make this again.

Cola Pork Chops

Good chops. I couldn't resist enhancing this dish just a bit. I seasoned the chops with kosher salt and ground pepper. I browned the chops then removed them to the baking dish. I sauteed some onions and mushrooms in the same pan, then covered the chops with that mix. Poured the sauce mix over all and only baked for 30 min. Turned out very good. Thanks Just_Peachy.

Mexican Fire Rice

We really enjoyed this. I cooked the rice in chicken broth. I used a can of rotel and half a jar of chunky salsa (med. heat). I mixed most of the cheese in with the rice and saved just enough to sprinkle on top. This was very "fire" like and will make it again. Thanks Chaunih

Grandma Ople's Apple Pie

Wonderful pie! I like apple pie but this was over the top with great and interesting flavors. You should try this recipe at least once as its written before you add anything "extras" to it. I didn't do the lattice top as I was using the "Never Fail Pie Crust II" from this site. It was too soft to try the pretty crust. I'll just have to learn to make a "real" pie crust!
