Holiday Cranberry Chutney

My kids loved it! They were surprised I served it with their meal because they thought it was yummy enough to be dessert. Not too sweet. Smells like the best Christmas candle you can find. YUM!

Sturdy Whipped Cream Frosting

Really sturdy icing as stated, very nice balance between whipped icing and cream cheese icing. We like Cream Cheese icing and this wasn't quite cheesy enough for a carrot cake but I will for sure use this on other cakes.

Cherry Pie IV

My first pie ever! This pie turned out wonderful although the filling was a little runny at first. (fixed with cornstarch--- remember to stir with a little water in a glass BEFORE adding, or else it will clump into little white balls and look gross!) I learned that if you leave the pie in the fridge overnight the cornstarch makes the filling perfectly wiggly (my version of saying the right consistency). If you don't think the filling is thickening, leaving the pie in the fridge overnight will really perfect it. I put leaves and an acorn design in the middle. (be creative and make any design!) My mother doubted I could make a perfect pie---especially she doubted the crust --- but it was complemented on by my whole fam. In my taste the crust WAS a little bland, but you can fix that by sprinkling cinnamon and sugar over the bottom and top crusts. When refrigerating the crusts... you dont have to go the full timing.. just make sure they are chilled before using. I also used butter instead of shortening, i guess thats a bid old fashioned no-no, but it made it nice and flaky-- perfecto!

Chicken Milano

This is delicious! We did as another suggested, substituted 1/2 cup broth for white wine. Using fresh basil over dried makes a difference too. Rendered the sauce down just a bit to thicken it up (I don't like cornstarch). I'm glad it made a lot, I was able to share some leftovers and have dinner again the next night.

Eggplant Bake

Oh my gosh! This is the best thing I have eaten in ages. All 3 kids devoured it. Broke my heart their were no left overs. I did not have feta so I used some fresh mozzarella. My only bread crumbs on hand where panko-I think they may have worked better because they stayed really crunchy. It probably is just as good the way it is written though.

Fish Tacos

The sauce in this recipe is super! I like to keep it on hand for all sorts of things. I used plain greek yogurt. I like to add a little smokey paprika but other then that it is the same! YUM! Sometimes I used Shrimp instead of fish and just saute them to keep it lighter. Black beans and cilantro rice just take it over the edge to FABULOUS!

Real Hummus

I made this as per the updated instructions. Fabulous! The only things I changed were a little less lemon juice and I also added a shake of a mediterranean seasoning blend that I have. I've never made hummus before but I think this will be a staple. Super delicious and very good for you.

Southern Chicken Fried Steak

I thought this turned out very yummy. One major tip - pound the crud out of the meat and get it as thin as you can. Otherwise you keep cooking it to get the meat done and burn the coating in the meantime. One reviewer said this was more like schnitzel, actually it is more like schnitzel only because you are pan frying it. If you want the traditional style chick fried steak you gotta deep fry it.

Cheese Fondue

It turned out great. Key is to flour the shredded cheese before melting it. That keeps the lumps from forming. Also, not heating it too high keeps it from burning and forming burnt lumps.

Cheese Herb Bread

Best Bread Machine Bread

THANK YOU..THANK YOU. This bread was fabulous! It is the first bread that I have made that actually came out. I have not been able to make bread either in the machine or oven! But this recipe was so simple! I did change one thing from the original recipe and that was to use 1/2 cup whole wheat flour and 2 1/2 cups of bread machine flour. We used the bread for sandwiches this afternoon shortly after it was done and wow! I definetly will be using this as a base for adding other goodies. I'm starting my second loaf for the day! Thanks again!

Baked Potato Soup

I needed to alter this because of a vegetarian guest. I was worried it wouldn't be as flavorful with vegetable stock and no bacon, so I added a dollop of pesto instead of the dried basil. At first it turned green and I got scared, but by the end of the cooking time the color mellowed and it was delicious! The pesto was like the secret ingredient! Everyone raved. I'll always make it this way.
