Japanese Tofu Salad

We use just shoyu and sesame oil for the dressing. I leave out the onion and cilantro, and add in some cucumber. Sprinkle with sesame seeds, and, simple and delicious dinner that my kids love!

Berry Oatmeal Muffins

I used a bag of frozen mixed berries, and substituted in 1/2 cup of whole wheat flour. Otherwise made as written, and they were great! My daughter needed snacks for her dance rehersals, and these gave her the energy to keep on her toes!

Oatmeal Cinnamon Drops

Absolutely delicious! Crisp and chewy, and a great combination of flavors. I threw in 1/4 cup ground flax as a sub. for 1/4 cup of oats, and toasted the walnuts before adding.

Chocolate Oil Cake

It was the week before payday- no milk, no eggs, no butter, and I NEEDED a chocolate cake. This is the recipe that saved the day! Good chocolate flavor, great moist texture. Keeps really well (amazingly, there is some left after 3 days). We added in about 3/4 bag of chocolate chips to make it more exciting. We will definitely make this again to go with our beans and rice for breakfast, lunch and dinner as we "count down" to the next payday!

Bread Pudding

Delicious! We loved the pudding. The sauce was VERY sweet. I did add nutmeg, and that helped, but next time, I will just double every ingredient except sugar, so I get more sauce, but less sweet. I ended up with to much pudding mix to fit in an 8x8 pan- the rest fit easily into a loaf pan. The water bath method worked really well, and gave the pudding a lovely custard consistency.

Old Fashioned Sugar Cookies II

A more than 5 star sugar cookie!! The dough was easy to work with (I made it beforehand and chilled it in the fridge until I needed it), and survived a pack of kids armed with cookie cutters. The flavor is superb- the heavy cream adds SO much flavor to these cookies. I substituted a couple of generous shakes of cinnamon (about a tsp.) for the mace. I would suggest whisking the egg in a bowl with the vanilla before adding- I cracked mine into the bowl, and the yolk took some mushing up to get it incorporated. This will be THE sugar cookie recipe we use from now on!

Agedashi-esque Tofu

I sliced mine into "sticks", then fried them, and they looked just like fish sticks! The kids held them and dipped them into the sauce. Before I sliced the tofu, I pressed it to drain out extra liquid. I think this is very important to keep the cornstarch from getting sloppy. Firm or extra firm tofu works best for pressing! Ours fried up nice and crisp on the outside, warm and creamy on the inside.

Mrs. Sigg's Snickerdoodles

Eight minutes to perfection! An absolutely delicious snickerdoodle. We used way more sugar/cinnamon than the recipe called for to roll the cookies (my kids didn't think measuring it was necessary!), and ended up with a wonderfully crisp layer of sugar/cinnamon on the bottom of our cookies. This will definitely be a cookie jar staple.

Hasty Chocolate Pudding

Very simple, very chocolatey! I don't have a microwave, but this is also quick on the stovetop. It tastes just like hot cocoa- the kids loved it! I've also made this with powdered milk, with the same tasty results.
