Curried Chicken Tea Sandwiches

Super delicious! The curry is not strong, so if you love curry, you can definitely add more. I made a nice presentation by buttering one side of the triangle of a completed sandwich and than dipping it in toasted sesame seeds. The seeds added a nice flavor and texture.

Creamy Au Gratin Potatoes

Delicious! If you want more "bite" just use freshly ground pepper and a fair amount and be sure you are using good extra sharp cheddar. It is easy to put together ahead and bake later for dinner. I will make it again and again.

Baked Mushrooms

I read all of the reviews about this recipe so I made some alterations to it and it turned out fantastic! I devoured it! The only reason I am giving it a 4 is because I changed so much. Here is what I did: Baby Bellas halved, onions (1 medium yellow) sliced, red and yellow bell peppers (2) chunked, 1/4 c white wine, 1 tbls minced garlic, 4 tbls melted butter, garlic powder, salt, lots of pepper, some lemon pepper seasoning, parsley, baked uncovered at 350 for 40 minutes. It looked delicious (though I wish I had put more mushrooms b/c they cooked down so much) and there was some liquid but it was good! And I drizzled it on some brown rice that I had with it. This recipe is definitely made to my liking (i love pepper and garlic!) but anyone can change it to how they like so it's a really good base. Enjoyed very much! And very low in calories! Especially if you use a light margarine instead of butter but then it wouldn't taste as good :)

Tangy Chicken

It was quick and easy to prepare which I like but I don't think it was great. It was all right though. Not bad by any means. The only change to the recipe I made was to use a sugar-free apricot marmalade mixed with some orange marmalade just because I already had that in the fridge. There was way too much sauce - it could have been cut at least in half for 6 chicken breasts. Do they have light Russian dressing? It would be nice to cut some of the calories...

Unbelievable Chicken

My boyfriend loved this last night and it was super easy! That is an A+ recipe to me! The only changes that I made were: half the sugar (we don't like sweet foods and are dieting), and I didn't have cidar vinegar so I used half white distilled and half rice vinegar b/c that is what I had. I didn't measure anything out really, just used lime and lemon juice too, we only made 2 chicken breasts so it worked out well! Definetely will do again!

Lemon Square Bars

This is a great recipe. The combination of the crunchy buttery crust, the creamy middle and the chewy top is perfect. I did "tweak" the recipe a little...I added a pinch of salt to the crust, used a little lemon zest in the filling, reduced the sugar to 1 3/4 cups, and used 3/4 cup lemon juice since I thought 5/8 cups was a sort of weird measurement. This recipe is a keeper.

Chocolate Chip Peppermint Cookies

These got devoured in my house! They keep asking me when I am going to make more! The mint flavor was great but don't keep these cookies in a zip-loc with other cookies, they will absorb some of that mintiness!

Basmati Rice

I find that it helps to soak the rice in a bowl of water first. Also, when cooking the rice (I usually just use my rice cooker), I like to add a cinnamon stick, 2 cloves, and a couple anise seeds to give it a more traditional flavor and great aroma!

Grilled Cheese Sandwich

A great way to cut a few calories is by using the Crisco spray butter --- it's just like Pam but has a great buttery flavor! Served with creamy tomato basil soup and you have the perfect winter lunch!

Garlicky Green Beans with Mushrooms
