Better Than Best Fried Chicken

I am only giving this 3 stars, because as usual, I burn not fry. I don't know why but I can not fry chicken for anything, it burns every time. Even burnt this had a good flavor. So since I can't fry fried chicken, next time I am going to try baking in the oven. I will do every thing the same then bake it. I am not sure if any one has tried that. To many reviews to read through.

Asparagus Quiche

My favorite quiche to make!! It is a flawless recipe that you can experiment with as you wish and to no fail. You can never have a too much bacon... or cheese. And it is always the perfect consistency!

Waffles I

It was my first time making waffles from scratch. The first few came out and tasted a little bland to me... better than Bisquick but nothing to fancy. I then doubled the sugar and vanilla, added some cinnamon and was much more pleased with the results. Not bad, but wasn't too impressed.

Bacon Wrapped Smokies

They were most definitely a hit for the Christmas party I took them to this weekend, possibly the first appetizer to be devoured! I don't think I put enough brown sugar on when I put them in the oven, so I added more in the crockpot which seems to really make a difference. Also, took another reviewer's advice and added maple syrup to the bottom of the crockpot... would HIGHLY suggest this step, cuz the smokies on the bottom were even more delicious! I also preferred using dark brown sugar, over other types. Great recipe, a few modifications, definitely greasy and a little messy to clean up. Everyone who reaches into the crockpot says "oh man- this is a heart attack on a stick"... but they keep reaching anyways!! :)

Apple Spice Dump Cake

Overall, probably the easiest dessert I've ever made. Smelled wonderful baking and tasted good too! Only issue I had was that the amount of spices seemed to overwhelm the apples, the flavor which I was really hoping would stand out. I'd make it again but probably either cut the spices in half or use the equivalent quantity (possibly a cup or two more) of homemade chunky applesauce or tender-cooked spiced apple slices instead of the canned pie mix. (I know it should be a 'dump' cake, but it's too hard to find apples in a can that aren't overly sweet.) Thanks for the recipe, we enjoyed this for Thanksgiving this year.

Breakfast Casserole II

This was pretty good; I consider it a variation of Tater Tot Casserole. I really liked the use of tater tots, as they are one of my favorite kinds of potatoes. However, I felt the recipe needed the addition of some sort of spices, and I was very hesitant about adding salt because of the sodium content of the ingredients already being used. Next time I make it I may add some pepper, or some chopped onion or garlic, to see if that livens the recipe up a bit. Also, one minor alteration I made was to shred 2 cups of Cheddar cheese so there would be enough to cover the casserole in a 13"x9" pan.

Apple Pie by Grandma Ople

I am not sure why but I can not bake for anyreason. But I decided to try to make my own Apple pie for Thanksgiving, so I decided to try this recipe, since it seems that it gets rave reviews. And even though I messed it up and the pie looked funny, it was wonderfully good. I will try to make this again and do a better job next time.

Pasta with Tomato and Bacon

I like discovering new variations on the traditional way to make spaghetti, and this tasty recipe fills the bill. It's easy to make and uses simple ingredients I happened to have on hand. I doubled the recipe to make sure it adequately fed my hungry husband and son, and there was plenty to feed the three of us plus leftovers. I used 8 slices of bacon (I had previously divided up a 3-pound package into freezer bags), and I didn't drain off the grease, as it helped to make the recipe more flavorful. I sauteed the onion and garlic in the grease and then added the tomatoes and cooked bacon. I simply crumbled the bacon into the sauce rather than breaking it into 1/2" pieces. I also used diced, rather than stewed, tomatoes because that's what I had in the cupboard, and they provided nice bits of color.

Slow Cooker Chicken Stroganoff

Wow! This was great and so easy. I didn't have a packet of Italian dressing so I just seasoned it liberally with Mrs. Dash's original blend (probably a tablespoon or so) and added 2 Tbs. of margarine. It was fantastic over egg noodles.

Bechamel Sauce

My husband prefers white sauce over red so I decided to try to make it from scratch and this recipe was super easy! I used 2 cups of half and half (I was trying to use it up), cornstarch instead of flour and a bouillion cube, plus I didn't have grated onion so I used a dash of garlic powder instead. It was still a bit on the bland side for me so I added about 1/2 cup of sundried tomatoes that I had. I poured it over Four Cheese Ravioli from Costco and my husband loved it. I will definitely use this as the base to most of my white sauces in the future.

Cowboy Stew II

I found this stew very delicious and filling, and it was a recipe I was able to put together at the last minute with simple ingredients I already had in my kitchen. I didn't have any canned corn, so I used a 16 oz. bag of frozen corn and it worked just fine. I didn't drain the kidney beans to make up for the water that would have been in the canned corn. I didn't use a separate skillet to brown the ground beef--I simply browned the beef and cooked the onions together in my stew pot before draining and adding the remaining ingredients. I used 1 teaspoon salt and 1/2 teaspoon pepper, and that seemed to add just the right amount of seasoning. Good stuff! Nice alternative to chili.

I made this today, it was good, and very easy to put together. I did not have chicken breasts, so I used chicken thighs. Still turned out good. I did add cumin, and ground red peppers. I am going to make this again, but I am going to try ground beef, to see if it is good that way also.

Country Chicken Casserole

I made this for dinner tonight with a few adjustments. I used 5 cups of hashbrowns and baked them for crispiness before adding the rest of the ingredients. I added the corn into the soup mixture, I used 2 cans of soup and 2 cups of milk. I used shredded Colby/jack cheese. This was good. Next time I think I will use more potatoes, and more cheese. My pickey children even liked it.

No Bake Cookies IV

Very yummy, easy to make, and the perfect treat to satisfy a chocolate craving. I'm sold on no-bake cookies. My husband won't keep his hands off them! The only minor adjustment I suggest is that after you remove the melted chips, marshmallow and butter mixture from the heat, stir in the peanut butter and vanilla first until it is smooth, then stir in the coconut and oatmeal. I used cookie sheets lined with waxed paper; actually I ran out of waxed paper for the second pan and substituted foil to cover half of it, and it worked just as well--the cookies came right off after they were set. I doubled the recipe and used a tablespoon to form adequate-sized cookies for three hungry guys, and I came out with approximately 4 dozen.

Baked Macaroni and Cheese with Tomato

This recipe wasn't bad, but it was a little on the bland side. It has potential, however, and next time I make it I am going to add some seasonings to give it a little more zip--maybe cayenne pepper or paprika, or Worcestershire sauce or dry mustard. It wasn't quite cheesy enough for my taste either, so I'll probably add an extra cup of cheese. I couldn't really tell that there was tomato soup in it. For the crumb topping I melted the 2 Tbsps. of butter, and then mixed it with prepared dry bread crumbs packaged in a canister that you can find in your grocer's baking goods aisle.

Ultimate Potato Soup

Superb soup! I added my own touches adapted from another favorite potato soup recipe--2 Tbsp. Worcestershire sauce and 1 tsp. dry mustard. These additions made it even more flavorful. I like lots of potatoes in my soup, so I used two extra cups of chopped potatoes. Incidentally, after cooking the vegetables for 15 minutes in the two cups chicken broth, there wasn't a whole lot to drain--the potatoes soaked up most of it. After thoroughly mixing the flour/butter mixture into the half & half, I added the remaining chicken broth and the seasonings, made sure it was mixed until smooth, then added the vegetables and finished heating. I also used 4 tsps. chicken boullion granules instead of chicken boullion cubes. This is definitely a recipe I will keep on hand.
