Smoked Sausage and Zucchini Saute

I thought this dish was a bit too spicy and on the dry side. All I really tasted was the smoked sausage, and barely detected the zucchini and tomatoes. I cut the zucchini into slices, and when it was time to add back in the sausage and the spices, I let it cook for 5 more minutes; then I stirred in the diced tomatoes and let it cook another 5 minutes, in hopes the tomatoes would let off enough juices to make it moister. If I cook this again, I may try a can of tomatoes instead, and add another zucchini.

Southwestern Turkey Soup

This recipe was really good! I only put in about a pinch of the pepper (I used chipoltle chile pepper) and I added a can of hominy corn. I also pre-cooked the onion and garlic in a little olive oil. My husband and kids thought it was fantastic. It was also VERY easy. Thanks for the great recipe!!!

Amazingly Easy Irish Soda Bread

Absolutely delicious! A hearty, full-bodied bread, and in my opinion as good as bread that takes hours to make, only much easier! The recipe is perfect as written. Make sure to use up the butter/buttermilk mixture by basting the bread a couple of times while it bakes, because it will make it taste and smell that much better! Postscript: I had a couple pieces this morning for breakfast, toasted, with apple butter. Yummy! I noticed it did develop more of a biscuity flavor after sitting overnight (wrapped in plastic).

Corned Beef and Cabbage

Overall, this is one of the best ways I have found to prepare corned beef. Tastewise, it was excellent and perfectly seasoned. The flavors were also infused into the vegetables, so there was no need to add anything extra to them like butter or salt. I followed a couple of reviewers' advice and placed the meat at the bottom of the crockpot and put the vegetables on top. I used a larger piece of meat (4 1/2 lbs.) and added a couple of extra potatoes, so the pot was full before I was able to add the cabbage. I followed another reviewer's advice and used some of the cooking juice to boil the cabbage in a separate saucepan.

Smothered Mexican Lasagna

I thought this recipe was okay; it had a lot of good spicy flavor. It had an odd texture, though, which I think was due to layering the ricotta/egg mixture on top of the tortillas. It came out soft and tasting rather like, I would say, imitation lasagna noodles. I didn't mind it, but my husband wasn't too fond of it. I used ground beef instead of turkey, and after adding the next five ingredients to the meat, let the sauce simmer for 10 minutes to allow the flavors to meld and the onions to get tender. I also topped the casserole with 2 cups of shredded pepperjack cheese, and increased the baking time to 30 minutes, so the liquid from the meat sauce would be adequately cooked in.

Hudson's Baked Tilapia with Dill Sauce

Really, really, really good. I've made this as is, and it is fantastic. We really like to put the sauce over mashed potatoes and serve it with steamed carrots on the side. Great recipe.

Brunch Egg Bake

I gotta say that I was pretty impressed. I halved the recipe and wish I wouldn't have! Even my toddler enjoyed it! I omitted the mushrooms, used pepper jack and sharp cheddar cheese and enjoyed this quiche-like dish without the crust!

Best Ever Muffins

THANK YOU THANK YOU THANK YOU!!! I can FINALLY make a muffin to be proud of! I added some fruit - the raspberry, blueberry and marionberry fozen berries from Costco... Oh my oh my these are sooo good. I only made 9 so they were nice and big, and took the advice of one reviewer who recommended preheating to 425 and then turning it down when you put them in. Perfect.

Apple Crisp II

FINALLY!! This is the one! The best apple crisp I have ever had... and I can make it! I used Granny Smith apples & followed the recipe exactly with the exception of adding 1/2 tsp ground cloves to the apples. Makes me miss my grandma!!!

Slow Cooker Chicken Taco Soup

OMG!!! I would rate this 10 STARS if I could. I had never made soup before, but this seemed easy. I wasn't expecting it to be too amazing, but WOW it just knocked my socks off. I used hot taco seasoning cuz its all I had and used Corona beer. Wouldn't change a thing. And oh, the cheese and sour cream on top... mmm... SO GOOD!

Grandmother's Buttermilk Cornbread

I have made this both the standard way and then also "spiced up" with chopped jalapenos and lots of cheddar and pepper jack shredded cheese mixed in!! It adds a wonderful twist that will be sure to please the men in your house!

Salsa Chicken

I used Pace Picante Medium Salsa (cuz we get the big jug from Costco!) and I used "Hot" taco seasoning. I thought the flavor was perfect. I put all the ingredients in a crock pot and the chicken was oh so moist and juicy! The only thing I would change next time... is I think it would be better used for a burrito filling.
