Colleen's Potato Crescent Rolls

Reviewed: Nov. 30, 2009
These had a good flavor, but were a bit too dense and heavy for our tastes. I did not let them rise long enough the second time, however, so it may be my own problem. =)

Roasted Brussels Sprouts

Reviewed: Nov. 26, 2009
We grew brussels sprouts in the garden this year, just for Thanksgiving. I've never liked them, but my folks do. My sprouts were on the small side so it only took 30 minutes to be a nice roasty brown. I was totally shocked to discover how sweet and delicious roasted brussels sprouts are! I did not use as much salt as called for (I did use Kosher but not as much) because we need to watch the sodium.

Cider Cheese Fondue

Reviewed: Nov. 15, 2009
This turned out well, though it was so rich we all felt a little unwell after making a meal of it. I deviated from the recipe in that I used flour rather than cornstarch with the cheeses. I am also glad I had read the hint of adding a little lemon juice to keep the cheese smooth. I used a combination of sharp New York white cheddar, Jarlsberg and double cream gouda. I think it is more approprite as part of a party buffet where you just eat a little bit of it.

Chocolate Orange Fondue

Reviewed: Nov. 15, 2009
UPDATE- Looked in the fridge later and discovered I accidentally used half and half instead of heavy cream. That would be the cause of my failure, both the curdling and the thinness. Half and half NOT a reccomended substitute. This didn't turn out at all for me. First of all, adding the orange juice to my heavy cream managed to make it go sour and start to have little clumps in it. Then when I added the chocolate, it melted but you could still see the white globs from the cream. The texture seemed grainy and yet it was quite thin. There also was not much orange flavor and overall it didn't seem sweet enough to me.

Great recipe, was a little bland, but I wouldn't doubt that it was my fault. Haha! It was phenominal with sauteed beef strips.

Strawberry Swirl Cheesecake Bars

Absolutely FABULOUS! It came out a little loose after 30 minutes of cooking, so I through it in the freezer for 20 minutes. It tasted absolutely amazing! I took a test-bite and squeaked with delight; demanding my roommates to take a piece it as well!

A super easy supper. I like it with Fritos even more than Doritos. Thousand Island dressing is another dressing option, too.

Slow Cooker Creamy Potato Soup

Reviewed: Oct. 22, 2009
This soup turned out wonderful with a couple of changes... Therefore, I'm only giving it 4 stars. Instead of the water/broth mix, I used all broth. Also, I substituted a can of cream of celery soup instead of the evaporated milk, since it's what I had. Gave it a little more creamy texture and flavor than I think it would have had otherwise. I see a lot of complaints about it being too thin... If that's the case, once it's done take a cup or two out and blend it in the blender. Pour it back into the soup and it will help thicken it up.

Lentil Soup with Lemon

Reviewed: Oct. 12, 2009
Delish! I didn't follow this totally as written -- used ginger, curry, cumin, coriander, salt/pepper, cinnamon, nutmeg to season -- no cilantro. Topped with sour cream blended with lemon juice/onion/garlic/coriander/cumin. Yum!!

Broccoli Cheese Soup VI

Reviewed: Oct. 4, 2009
This recipe is a good starting point but I wouldn't have liked it if I'd stopped where the recipe instructions did! It needs pureed to meet my expectations of broccoli cheese soup. To include that step, I added the broccoli to the broth/flour mixture but waited to add the cream and the cheese. Once the broccoli was tender, I scooped it into my blender with a slotted spoon and added some of the liquid and zipped it up until smooth and returned it to my pan. Then I added the cream and cheese. I agree with those who say it needs more cheese, I added probably double the amount (until I could taste it in the soup). Depending on your broth, you will definitely need to add salt as well.

Jamie's Minestrone

Absolutely fantastic! I added extra garlic, was heavy on the herbs and pepper. Thought the red wine added a nice touch --- I wouldn't leave it out! I used whole wheat penne -- I like the nuttiness and density of the pasta, it holds up quite well in this soup.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Reviewed: Oct. 4, 2009
These were great! I only had ~1 c choc chips, so I added a fair amount of cocoa powder and a little extra sugar to make up for it. These are great -- very dense and moist. I made mini-cupcakes instead of a big cake - perfect for gatherings!

Salad Dressing Cupcakes

Reviewed: Sep. 27, 2009
These were very good. The texture was not quite what I was expecting, but it tastes very good, and kept very moist. I was leery because of another comment about the smell. I hate mayo (or any version of it) which is why I wanted to try these so I could get rid of a large jar of miracle whip I bought (to make potato salad). While combining the wet ingredients I definitely was put off by the smell. However, I found that once the flour and cocoa were mixed in it just smelled like regular cupcake batter. I will probably use this recipe again - it was VERY simple and yielded good results :)

Soft and Chewy Peanut Butter Cookies

These cookies were great! A trick I learned from my mom when making cookies: always do 1/2 butter and 1/2 vegetable shortening. The cookies tend to stay fluffier and end up less greasy. I also added some chocolate chips the second time around...fabulous!!

The Best Vegetarian Chili in the World

I made this recipe exactly as it states, and it was great! The next time, I did modify it a bit: I didn't use jalapenos, used 1/2 the amount of veggie crumbles and an extra can of beans. Either way it was fabulous, but many people cannot stand the extra heat!
