Marinade for Chicken

Very very good. I added some dried Chile flakes, onion powder, ginger and fresh orange juice to the second time around and they both turned out really great!

Beef Fajita Marinade

Used this on about 20 pounds of flank steak this weekend. Wow! I wasn't very exact with the measurements, but after marinating most of the day, it was the best flank steak I've ever made. Also, I was running low on tequila, so a little white rum got mixed in, too. Topped the steak with some fresh pineapple salsa, and it was a delight.

Blue Cheese Potato Salad

Made this at a party I catered this weekend, and people wouldn't stop talking about it. Made a couple of changes--used cider vinegar in the dressing and roasted the potatoes. But seriously--bacon, blue cheese, and potatoes? If you don't like this, you're just not eating right!

Wheat Crackers

We had a hard time getting the texture correct. I ran out of flour working at this. I will try some different things but I was not impressed with how much difficulty we had trying to get it right and I bake,.... a lot......

Ham and Bean Soup II

I also had to change a couple of small things but my 9 year old loved it and it freezes great. This was a very tasty filling soup. Great for cold nights served with warm fresh bread. yummmm

Stuffed Peppers

Not bad, I was afraid of them being too dry so I poured in a lot more tomato sauce than required and continued basting with tomato sauce while the peppers were in the oven. For extra flavor, I also baked the peppers with the tops on!

Firemen's Meat Loaf

I loved this meatloaf! Although I did change a few things... I mixed one of the jars of green chilies into the actual meat and mixed some of the salsa into the meat as well. We served it on Sandwiches with cheddar cheese. Great Dinner!

The Best Double Chocolate Chip Cookie

I can't exactly rate this recipe because I made one alteration that could have changed the outcome-- I used butter... but because I was taught to use butter. These cookies taste absolutely amazing and rich in chocolate. I never bake dark cookies, so it was very difficult for me to take them out right when the edges were dark/ a little under-baked (the way I like my cookies). These cookies were also not very aesthetically pleasing. But, I definitely thought the chocolate and crispiness of the cookies were fantastic.

Chicken Tortilla Soup V

My family loves this recipe... My brother even liked it immensely and he doesnt care for tortilla soup usually. Very flexible recipe, I didnt have the corn so I used some fresh snapped green beans and some chopped green and yellow zucchini and I also added a bit of Cilantro to the chicken before I put the broth in. It turned out excellently. Its definitely turned into a family favorite!

Chex® Muddy Buddies®

I thought the chocolate/peanut butter combination and flavor was perfect. I accidentally bought UNSWEETENED banana chips (instead of sweetened) and didn't want to waste the. Somehow I thought about using the chips in this type of party mix form and used half banana chips and half chocolate Chex. I would recommend this. Although I didn't follow the recipe completely, I thought the ratios worked well.
