Gingerbread Pear Cake

I love to make upside down cakes. This cake was a gem to discover while looking for a last minute dessert option for an impromptu dinner party. The house smells delightful, and cake is not only seasonally appropriate, but it is a unique and tasteful addition to a tradional dinner.

Delicious Chicken Casserole

This is one of my family's new favorite recipes! My husband LOVES it! This recipe is one where anything goes. Have leftover chicken or rice you have to use up? You don't need exact measurements! I've added more or less chicken, rice, celery, sour cream, and/or crackers than the recipe calls for, and it still turns out terrific every time! I've made it for potlucks, company, and just for us, and I've had people begging me for the recipe or asking for more. If you're searching for a fantastic potluck casserole, or a comfort food to prepare for those cold winter nights, this is it!

Oliebollen (Dutch Doughnuts)

I just finished making my first batch and it was just yum yum. I added two tablespoons of white sugar to the milk and yeast. We love apples in ours and we used a tart apple.

Gazpacho

Very good and flavorful (I'm not too familiar with gazpacho and how it "should" taste). Maybe my eyes are sensitive, but I found myself crying while I was eating this, so I would lay off on the onions at least by half the amount the recipe calls for. Unfortunately I added feta before even trying the gazpacho without it because a friend said it was a must.

Beef Fajita Marinade

Used this on about 20 pounds of flank steak this weekend. Wow! I wasn't very exact with the measurements, but after marinating most of the day, it was the best flank steak I've ever made. Also, I was running low on tequila, so a little white rum got mixed in, too. Topped the steak with some fresh pineapple salsa, and it was a delight.

Blue Cheese Potato Salad

Made this at a party I catered this weekend, and people wouldn't stop talking about it. Made a couple of changes--used cider vinegar in the dressing and roasted the potatoes. But seriously--bacon, blue cheese, and potatoes? If you don't like this, you're just not eating right!

We had a hard time getting the texture correct. I ran out of flour working at this. I will try some different things but I was not impressed with how much difficulty we had trying to get it right and I bake,.... a lot......

Ham and Bean Soup II

Stuffed Peppers

Not bad, I was afraid of them being too dry so I poured in a lot more tomato sauce than required and continued basting with tomato sauce while the peppers were in the oven. For extra flavor, I also baked the peppers with the tops on!
