Holly's Hummus

So easy! And lower fat. I definitely am going to try this making my own garbanzo beans instead of canned because it really affects the flavor. I also felt there was a bit too much lemon juice in this recipe for my liking.

The Best Lemon Bars

Wonderful buttery crust but not quite lemony enough - wish I'd of listened to a few of the reviewers who stated this. I think it needs one more lemon. I did add some zest and topped with some sifted powdered sugar. Thank god I'm giving these away or I'd eat em all - lacking lemon flavor and all.

Whipped Shortbread Cookies

I piped them into little rosettes - they're so cute. Really delicate, so next time I'll make them smaller (one bite). I also used unsalted butter and wish I had added a bit of salt to the batter. Overall, fun to make and taste great.

Raspberry Cream Muffins

I definitely backed off on the sugar a bit and did not add to the top of the batter - just overkill. The thick batter does do number on the raspberries as you fold them in but the raspberry flavor was still excellent. I think these would be fine without the almond extract - it was pretty prominent and did not enhance these. I would also use less white choc. if I ever made again. Thanks.

Rustic Multi-Grain Bread

I made this bread today and it is truly a VERY good bread. I trade bread for fresh eggs and the couple that I get the eggs from was over tonight for cocktails and dominoes. I gave them some of the "new" recipe I found and asked if it was "good enough" to trade for eggs. They really loved the bread too! I did read through the review first and made a few changes. I used 1/4c each of light molasses and honey (no sugar). Added 2 tablespoons of flax seed, about 1/2c of quick oats to the hot milk and water (soaked the oats while the temperature came down to 110-120) and 1 Tablespoon of vital wheat gluten. I baked the bread at 375 for about 25 minutes and found the crust starting to get dark so I dropped the heat back to 350, stuck in the probe of my thermometer and baked until the internal temperature was about 192*. Next time I'm going to up the flax and add some soaked wheat berries for a little more "chew" This is a very good recipe to "tinker" with. A true Keeper!

Heavenly Hash Bars

Everything was great about these but the only reason why i didnt give it 5 stars is because i have to store them in my refrigerator because they literally start to become very soft within 10 minutes of keeping them out.

Hot Cocoa Mix in a Jar

This mix was so easy to put together! I did sift the (non-fat) milk powder, cocoa powder and confectioner's sugar to get a nice smooth texture. Mixed it in my stand mixer with the whisk attachment and it was fast. I actually put this mix into plastic frosting decorator bags- layered with sprinkles, crushed candy canes and marshmallows- they make a great Christmas Gift!! Thanks for a wonderful recipe!

Easy and Quick Cream Cheese Potatoes

Good. I did use garlic powder and sea salt. That was the only change I made. I think these would have been better had I sauteed the onions in the butter, then added them to the potatoes. I'll do that next time.

Sweet Potato Enchiladas

surprisingly delicious! i love sweet potatoes but the mixture of ingredients had me questioning it. it was amazing though! i used white sweet potatoes (didn't know it until i got home and started peeling the skin off and it wasn't orange, nevertheless, just as good) and also used fat free cream cheese to help cut down on the calories and fat. i also added a can of chicken, subbed sweet white onion for green and used green enchilada sauce instead of red. SOOOO good. the green sauce is a MUST! it complements the enchiladas so well. a little tip to cut down on the time is to peel and cube the sweet potatoes and boil them for fifteen minutes. cuts down about 20 minutes on cooking time.

Fantasy Fudge

I make this fudge EVERY Christmas and I had to find people to hand it off to because it's SO good and quite addictive. I make one variety with pecans and one with crushed candy canes, peppermint extract and Baker's white chocolate. Both are amazing and you really can't eat just one. I will pack this fudge in pretty plastic lidded containers with green or red tissue paper as a buffer. Everyone flips for it. Much more personal.

Peanut Butter Fudge IV

My husband thought this was good, but not peanut butter-y enough for him. Didn't stop him from eating half of the batch in one night and getting a bellyache. I used Skippy super-chunk and had no issues. It was easy, I'll admit.

Hudson's Baked Tilapia with Dill Sauce

I must agree that the sauce is delicious. I cooked the fish as per the recipes except I put some butter on the fish to keep it moist. I usually am scared to cook white fish as I've dried it out before but this turned out perfectly. I also really really liked ths sauce with the steamed brocolli I had with the fish.

Easy Biscuit Mixture

I made a 1/2 batch of this mix, using 4 cups all purpose flour and 1 cup whole wheat. I used butter instead of shortening as well. I ended up mixing the entire batch with 2 cups (plus a little) of milk and it ended up a tad too wet- will def use just 2 cups milk next time. I mixed it in my stand mixer and this was so easy. I used the mix for cheese dumplings in my tomato soup- got about 7 of them into my pot. I made up 13 more dumplings and froze them (uncooked) in a greased muffin pan. Now tomato soup with dumplings will be a quick meal and less work! Thanks for a great recipe- its a keeper for sure!!
