Fish Tacos

This was awesome! I didn't batter the fish, just fried it a bit in olive oil. I also added tomatoes and used high-fiber wheat tortillas. My husband praised it too!

Greek Orzo Salad

I made this tonight and it was so good! I added cooked chicken, left out the artichoke juice and for spices only used salt, pepper, parsley and oregano. Yummy yummy. I will make this again! It would be good (maybe w/o the orzo) wrapped up in a tortilla.

No Bake Bumpy Peanut Butter Nuggets

Yummers, these were easy and good! I used milk b/c I didn't have dry milk, and used honey instead of apple juice concentrate. My husband and kids loved them too.
