Coconut Cranberry Bars

These bars were pretty good. Next time, I would use less than the whole can of sweetened condensed milk - I thought it had a strong, unpleasant flavor in parts of the bar where it was poured on thicker. I used both white and semi-sweet chocolate, which was very good. I think it would be interesting to experiment with a pretzel crust.

Pumpkin Waffles with Apple Cider Syrup

A festive holiday treat. The waffles are in need of a little more sugar and spice. I added 1/4 cup of agave syrup, and decreased the milk by 1/4 cup. I used whole wheat pastry flour and replaced the butter with about 1/8 cup canola oil. Out of necessity, I had to replace some of the pumpkin with roasted sweet potato. If you have problems with the waffles tearing apart when you open the lid, try turning down the temperature and cooking for longer; I've also found that Pam for Grilling spray works better than regular cooking spray.

Fruited Cranberry Relish

I used a 6-ounce can of drained mandarin oranges and a peeled golden delicious apple. I like tart cranberries, so omitted the sugar completely - tasted remarkably like grapefruit - I would probably use the full amount of sugar if serving this to anyone else. Thanks for sharing, Ruth!

Cinnamon Apple Pancakes

I was not impressed with these pancakes, but my kids loved them. These are rather bland and soggy. I shredded the apples and added a couple T brown sugar. I had to cook them over low heat to cook the insides without burning the outsides. I might make these again if the kids request it, but would only make a half batch.

1 quart of water wasn't nearly enough, I had to add two more cups of water. Also I thought it lacked flavor, next time will be using beef broth instead of cubes. Because you drop in the meatballs before cooking them we were worried about the fat content. Next time I am going to use precooked ones.

Caramelized Apple Rings

I made caramelized apple dices for a dessert apple pizza. I took a lot of liberties with this recipe: I used 4 apples (peeled & diced), a little less butter and a bit more sugar, and a lot of cinnamon. This made a nice cinnimon "sauce" at the bottom of the pan - I thickened it by adding a little bit of quick oats. The apple pizza was quite delicious! Thank you for the inspiration, Helen!

Baked Teriyaki Chicken

awesome and so easy I baked it at 350 for about i hour without the skin on and then threw it on the grill to caramelize it is better than my favorite Chicken Teriyaki restaurant serve with sticky rice so stinkin good

Sneaky Vegetable Lasagna

David loved this - it looked and tasted meaty, but he had disect to lasagna to discover it ws actually broccoli (and lots of it!). I used Victoria marinara sauce from Costco, and it was very oily - I created this recipe while trying to make the sauce less oily. Worked out great. Will make again! Stef liked it, Evelyn wouldn't try.

Czech Cabbage Dish

Cabbage, bacon, and vinegar? I was skeptical at first but yum! I didn't need any vegetable oil since I did not drain any bacon fat which probably made it even more tasty. Definitely adding this one to my recipie collection!

Shortcut Potato Onion Perogies

so good and easy I made the dough in the food processor and I made my own filling with butter garlic onion soft cheese and half and half boiled and sauteed in butter my kids loved them said they were way better than store bought next time I'll double the dough and freeze a batch

Boiled Peanuts

Yummy and fun to eat. I hadn't had this treat since I lived in SC. I boiled mine for 2 hours. I had a hard time tracking down raw peanuts, but finally found them in an Indian market.

Mom's Snowy Day Chili

One of my favorite chili recipies, and so easy too. David loves it. I think the girls like it too (last made it a half year ago). Too much gives me acid stomach though. Serve with rice and toppings.

Andalusian Gazpacho

Make sure everyone has some so you are not a lone reeker. I did not have sherry vinegar, so used red wine vinigar, lemon juice would probably be fine as well. Didn't have fresh basil, used dried instead. Fresh cilantro might be good too. I ground the cumin in blender, but put the garlic in with the tomatoes (didn't make paste as recipe said). I liked this - good to eat before flu season.

Zucchini Quiche

I thought it was so-so but the man loved it. A little bland for me. It took well over an hour to cook, not 45 min. Next time I'll try cheddar instead of mozzarella to see if it gives it a little more kick.

DO NOT WASTE YOUR TIME MAKING 1 BATCH. Double up the recipe. I made 2 changes. I substituted half of the flour for Bob's Whole Wheat Pastry Flour & omitted the fork & sugar bit. KEEPER
