Coconut Cranberry Bars

These bars were pretty good. Next time, I would use less than the whole can of sweetened condensed milk - I thought it had a strong, unpleasant flavor in parts of the bar where it was poured on thicker. I used both white and semi-sweet chocolate, which was very good. I think it would be interesting to experiment with a pretzel crust.

Pumpkin Waffles with Apple Cider Syrup

A festive holiday treat. The waffles are in need of a little more sugar and spice. I added 1/4 cup of agave syrup, and decreased the milk by 1/4 cup. I used whole wheat pastry flour and replaced the butter with about 1/8 cup canola oil. Out of necessity, I had to replace some of the pumpkin with roasted sweet potato. If you have problems with the waffles tearing apart when you open the lid, try turning down the temperature and cooking for longer; I've also found that Pam for Grilling spray works better than regular cooking spray.
