Indonesian Pork Tenderloin

I had 2-1 lb. tenderloins so I doubled the marinade. Marinated for 2 hours - bbq'd and basted with the extra marinade and this knocked everyone's socks off (ok well flip flops, it was warm out). I was heavy handed with the red pepper flakes as we like that kinda thing and it was soooooooooooooo good. Loved the hint of the lime flavor in the background. Will definitely make this one again and again. Thanks Pat Patty from Patti :-).

Dry Rub for Ribs

This rub produced some very successful ribs. I also used half regular and half smoked paprika. After applying the rub I used another recipe's technique and cut the racks into serving portion sizes. I double wrapped them in foil and put all in a large roasting pan and baked for about 2 hours @ 300. Then we grilled them and added bbq sauce to finish. They were loaded with flavor and very tender.

Artichoke Stuffed Mushrooms

I used the non-marinated artichokes, mozzarella and parm cheeses. These were awesome - I was lucky to get one. I need to make some when no one is around so I can have some guilty food pleasure all to myself. Thanks Anita for sharing this.

Texas Chicken Quesadillas

I had some tortillas to use up and some chicken. This was surprisingly good for being so simple. The caramelized onions did the trick. I did not add honey to the onions - no need to. I used Sweet Baby Ray's honey bbq sauce. I did them in my grill pan. Simple and very good. Thanks Michelle!

Green Peas Supreme

I found this recipe because I had some canadian bacon to use up. I love onions but hate pearl onions so just chopped a walla walla sweet and cooked with the bacon. Was surprised at how good this was.

Creamy Horseradish Garlic Spread

I used mild horseradish and would recommend using extra hot for meats. The mild tasted a little bit like ranch dressing with a zip. It does taste good as a vegi and chip dip. I added extra hot and that seemed to go well with the meat I served tonight. Good either way!

This was excellent. Great flavor and a nice texture. The only thing I did differently is I did not add the pimientos...I'm just not a fan. I'm sure that would add to the visual appearance but who cares when it tastes this good. Thanks!

Apricot-Glazed Cornish Hens

This recipe produces an absolutely outstanding, moist, flavorful hen. It's perfect - I wouldn't change a thing. I did use sugarless preserves tho and if that affected the outcome negatively than this deserves more stars than I'm allowed to give it. Thanks for sharing such a great recipe Randi. I will make this often. I'm imagining cutting these in half and trying them on the grill next time.

Creamy Dill Dressing

We used this as salad dressing and also on the fish we had for dinner. With the lemon juice and dill it would be a nice sauce for any fish. I used non fat half-n-half, low fat sour cream, a mix of reg. mayo and light mayo and splenda. This was still rich and wonderful. Will make this often! Thanks Katheryn!

Oven-Fried Catfish

I was not crazy about the cornmeal altho it was nice and crisp. This was very bland in my opinion - the cornmeal flavor overrode all the spices. Needs some hot sauce in the milk or cayenne in the cornmeal mix. I will stick with the cajun baked catfish (AR) it is very flavorful with no cornmeal. Thanks.

Roquefort Dressing II

This was very good but did not outdo my favorite. I only added about 4 oz of bleu cheese. The 6 oz would of been way too strong for me. This was too thick - I had to add about 1/4 C buttermilk to get the consistancy I wanted. Thanks for the recipe Rumba.
