Honey-Mustard Salad Dressing

Reviewed: Oct. 1, 2009
Excellent dressing. I used olive oil and it was great on our salad. Next time I will back off on the oil just a bit. I did cut the recipe in half. Thanks for a good dressing Jean.

Taco Seasoning I

This was great. Will definitely make this instead of buying the packets in the future. It brought my (sigh) ground turkey, to a higher level for our tacos. Thanks.

This was pretty good altho I thought it was a bit too much cheese. Would cut back if I made it again. Was a nice side dish. Thanks.

Buffy's Refried Beans

Reviewed: Sep. 27, 2009
For being so simple this turned out really well. I saved a bit of bacon grease from breakfast and combined that with oil in lieu of the lard. I also used chicken broth and added one chipotle pepper in adobe sauce. These were very good and enjoyed by all. Thanks.

Old-Fashioned Vanilla Pudding

Reviewed: Sep. 24, 2009
I doubled the recipe and good thing I did. Two of us still polished this off. This was soooo very easy and soooo very good. I would suggest using un-salted butter and make sure you use a very good grade of vanilla. Vanilla is one thing you should spend alittle more money on and buy the good quality product - please please don't ever use the imitation stuff. The vanilla will really have an impact on the flavor of your pudding. Will defnitely make this again. Thanks so much Katie!

Spicy Peach-Glazed Pork Chops

Reviewed: Sep. 22, 2009
This is a good starting point but far from what I will do next time I make this. As is it is a bit on the bland side. This just screams for a couple cloves of minced garlic and I will double the chili paste next time. I will also reduce the sauce a bit before returning the chops to the pan. My sauce was a bit on the thin side and didn't coat the chops like it should. With those changes this will definitely be a 5+ star recipe. Thanks Virginia - we enjoyed your recipe and will enjoy it again with minor modifications to suit our tastes.

Creamy Chicken Lasagna

Reviewed: Sep. 18, 2009
Without my additions I still would have gave it 4 stars due to the cream cheese. I love the creaminess it lends. Anyway, Lasagna's has always been my achilles heel in cooking. I just don't like way they taste when "I" make them. This however, was delicious and very easy to make. My husband loved it. I stuck with the two layer as I don't like my lasagna too thick. 6 Noodles in a 11x7 dish. Plenty. Poached my chicken with onions, celery tops, garlic and another bouillion cube. After chicken was done, I also boiled my noodles in the same water. No sense in wasting it and another layer of flavor it adds. I love the cream cheese filler a lot better than the ricotta. Ricotta can be a bit 'grainy' and Cottage gives off too much liquid. I too, diced my chicken (small chunks) as I envisioned a cleaner cut of lasagna squares than if you shred. I added some fresh cooked spinach (squeezed-DRY), pepper flakes, Kraft Parmesean Cheese, fresh ground black pepper, garlic and a tablespoon of "Salad Supreme Seasoning" (I love that stuff and it's not just for salads). Oh---and 1 egg. I chose Ragu because I like the sweetness it has. This was better than one made the original way but will try next time with mixture of italian sausage & chicken. Now that's got to even more yummier-er. You think?

Baked Salmon Fillets Dijon

Reviewed: Sep. 16, 2009
I have made this a couple times. This time I made my own bread crumbs in the food processor using sour dough bread, adding some olive oil just to barely make them damp and some fresh parsley. Pulsed it a few time. I seasoned the fillets with some lemon pepper and just a pinch of sea salt on each fillet then applied the dijon. Covered with the bread crumbs just lightly pressing them into the dijon. Butter not required this way either. This definitely was an improvement from past experiences. Try this I think you will like it.

Raspberry Oatmeal Bars

Reviewed: Sep. 16, 2009
These were ok - I think I prefer the ones I make without using the package cake mix. I didn't care for the aftertaste that I thought was quite prevalant. I used almost double the jam - can't imagine 1 cup being enough. I will say that this was so easy and accetable when in a hurry for something sweet. Thanks for the recipe.

Smoky Mountain Chipotle Chicken

Reviewed: Sep. 16, 2009
This recipe is incredible! We all loved it. The sauce alone is so good I'm dreaming of all sorts of ways to use it. Only thing I did differently and I'm glad I did was instead of grilling the onion slices I caramalized them in a pan. That way I could almost smother the chicken with them, then add the bacon and cheese. This was so so jam packed with flavor. I thought the heat level was pretty mild and might add an extra pepper next time. I will make this again for sure. Thanks so much for sharing this one Janine.

Cavatelli and Broccoli

This was very good. I too used the pasta water trick and added the red pepper flakes in with the oil and garlic. I shocked my broccoli in ice water to maintain the vibrant green color. Nice clean simple flavors. Thanks!

Best Steak Marinade in Existence

Reviewed: Sep. 13, 2009
This did not blow our socks off. It was good but will stick with our favorite steak marinade that does blow our socks off. Was nice to try something different and we always hope to find a new favorite. I marinated top sirloin for almost 2 days due to a change of plans. Good but not better than our standby. Thanks for the recipe.

Indonesian Pork Tenderloin

Reviewed: Sep. 2, 2009
I had 2-1 lb. tenderloins so I doubled the marinade. Marinated for 2 hours - bbq'd and basted with the extra marinade and this knocked everyone's socks off (ok well flip flops, it was warm out). I was heavy handed with the red pepper flakes as we like that kinda thing and it was soooooooooooooo good. Loved the hint of the lime flavor in the background. Will definitely make this one again and again. Thanks Pat Patty from Patti :-).

Dry Rub for Ribs

Reviewed: Aug. 30, 2009
This rub produced some very successful ribs. I also used half regular and half smoked paprika. After applying the rub I used another recipe's technique and cut the racks into serving portion sizes. I double wrapped them in foil and put all in a large roasting pan and baked for about 2 hours @ 300. Then we grilled them and added bbq sauce to finish. They were loaded with flavor and very tender.

Texas Chicken Quesadillas

Reviewed: Aug. 21, 2009
I had some tortillas to use up and some chicken. This was surprisingly good for being so simple. The caramelized onions did the trick. I did not add honey to the onions - no need to. I used Sweet Baby Ray's honey bbq sauce. I did them in my grill pan. Simple and very good. Thanks Michelle!

I found this recipe because I had some canadian bacon to use up. I love onions but hate pearl onions so just chopped a walla walla sweet and cooked with the bacon. Was surprised at how good this was.
