Easy Texas Chili

This was, as billed: easy, delicious and classic. I omitted the chopped chili for the younger members of the family and left it simmering on low for the afternoon and it was delicious. Perfect for a rainy Seattle fall day. Not that it rains here...

Thank you for the reminder on making applesauce! Go figure should be a no brainer, but I always forget and ask myself, "add water?"... "don't add water". Perfect for a grey day!

Chicken Marsala

One of my favorite chicken recipes!!! I do add chopped onion, diced garlic and extra marsala. (Tip-- also works with thighs instead of breasts, which don't get as dry when cooking.) Thank you so much for sharing this one. It is simple, amazing tasting and can have a fabulous presentation for dinner parties.

Salmon Patties I

My mother used to make these growing up so I crave them once in a while. Instead uf using bread crumbs I use crackers like saltines or ritz to add a little more flavor. Panko is good too if you want a little more crunch!

Gourmet Mushroom Risotto

This recipe was good, but I never realized how long you had to cook the risotto and have to watch it the entire time so it does not burn or get dry. I had to add more water eventually than the recipe called for. I used portabella mushrooms instead that I put on the gril. The end result was well wort the wait!

Banana Crumb Muffins

These muffins are to die for! What a great way to use up over ripe banannas. I have tried this with apple bananas as well and was just as good. I usually add one or even two more bananas to make it super moist. I actually have to make these muffins at least once a week for my boyfriends employees! This is a must bake!

Chicken Katsu

This is one of my favorite Japanese dishes and I am happy I can finally make it at home. The tonkatsu sauce is a must with the chicken and my favorite side is sushi rice. De-lish!

Annie's Fruit Salsa and Cinnamon Chips

A great summer dessert. I took out the apples and added mango and pineapple for a more tropical taste. Make sure you cook the chips untill they are crunchy or you might end up with a few soggy ones.

Heather's Cilantro, Black Bean, and Corn Salsa

Very easy to make and quick also when you have guests! I made homemade tortilla chips to go with them for a more authentic taste. Yummy, yum yum. :)

So for next time: Smaller dates (larger ones tend to make this treat way too sweet!) Instead of almond, perhaps a Kalamata olive!
