Hearty Lasagna

Reviewed: Jun. 4, 2009
Just took it out of the oven. The only changes I made was to add minced onion to the hamburger as it was cooking, minced garlic and dried basil to the meat sauce, 2 cups mozzarella to the top. I would have given this a 5 but the measurements were off a bit. Next time I will use 2lbs of hamburger and 2 cans of the sauce. {I prefer Hunts 4 cheese blend for sauce, not as sweet as the jar sauce. Tastes more authentic). And 4 cups of ricotta cheese.

Best Chocolate Chip Cookies

Reviewed: Apr. 17, 2009
After reading several of the reviews I tried this recipe. I exchanged one cup of the flour for unbleached All Natural flour and added 1 1/4 teaspoons Cinnamon. What a great surprise! Cookies were crisp and had that just right spice! I will use it again. :) Thanks

Carrot Cake VI

Reviewed: Mar. 9, 2009
Hi Erma This is indeed excellent carrot cake. I looked high and low for a recipe that used a fraction of the oil that most recipes called for. I agree with another reviewer that it is more like quick bread, but never-the-less it is excellent. Moist, tender, flavorful. That being said, I made a couple of changes for my preferences: doubled the spices; decreased baking soda to 1 tsp and added 1 tsp baking powder. Also added crushed pineapple and used the juice to make up some of the liquid. Decreased sugar to 1 cup: half brown and half white (Whey-Low). Used 2 cups grated carrots. What a great recipe. Cooking all the fruit and veggies for a few minutes has to be the secret to the moistness. I let it cool thoroughly before baking. Baked in an 11x7 baking dish to make a single layer to cut into squares for lunch boxes. My family was in heaven. I bet it will be better in a couple of days--if it lasts that long. thank you so much Judy in WA

Roasted Garlic Cauliflower

Reviewed: Mar. 1, 2009
We used colored cauliflower, from the local farmers...green, orange, purple and white. I did blanch it first. But the clean up was easy. I just sprayed the baking dish with cooking spray! It is now our staple winter vegetables, and an elegant dish to serve guests for Christmas dinner!

Baked Beef Stew

Reviewed: Feb. 23, 2009
I agree with other reviews. I left out the bread, and used beef broth instead of the granules and chopped garlic.. My husband still stated that it needed more seasoning (because he likes things a little on the spicy side) Will make again.

Pecan Pie V

Reviewed: Jan. 15, 2009
Hi Elaine: Just add my thanks to the rest. I have been cutting out corn syrup, so have been looking for a recipe without it for a few months. THIS IS DELICIOUS PIE That said, I did every modification to reduce calories that I could, and it still tasted lots better than traditional pecan pie. Changes as follows: Whey Low brown and white sugar substitute Egg substitute, Smart Balance for butter, no crust Extra vanilla, non-fat milk and 2 tbsp of bourbon (probably undid all the other good things I did-lol) A delicious pie. Thanks again Judy in WA

Unstuffing Side Dish

Reviewed: Jan. 12, 2009
This recipe was the perfect cure for my stuffin cravin. I made some changes though: I used leftover chicken breast cut into cubes instead of sausage, add twice the amount of onions, added more seasoning salt, and used half white onions and half brown onions. I made my own croutons with sourdough bread. If you use bakery-type bread instead of packaged bread, you might want to trim off the crust, since those bits were too hard for my tastes in the final dish.

Award Winning Soft Chocolate Chip Cookies

These are amazing, but they turn cakey if you overcook them! I've made these a ton of times, and 7 minutes is the perfect cooking time for me. Once they cool, they are chewy and perfect! I wish I didn't know how many sticks of butter were in them though!

Delicious! I gave it four stars because you need either more bacon or less pasta. I would at least put four more slices of bacon. Other than that, yum!

Cuban Midnight Sandwich

Needed something quick for dinner a few weeks ago. Husband had gaming night, and eldest son had pep band. was delicious. I don't have a panini machine so I used my griddle and a cast iron skillet to flatten sandwich. Served with coleslaw and put pickle on the side.

Sauteed Garlic Asparagus

Reviewed: Sep. 25, 2008
I have made this recipe several times and will continue to do so. I make just a few changes. I use olive oil instead of butter and I cut each asparagus spear into 3. This made it more kid friendly and be easier for my kids to eat - for whatever reason they eat more when I cut it up then when I serve whole spears. Watch the cooking time if you cut the spears up - they cook and bit faster. Overall this is an easy and nice tasting recipe.

Blackberry Pie I

Delicious Pie!! Also easy to make and not to sweet or bitter. It has a distinct tart taste to it which makes it even more enjoyable. But the sad thing is that this pie hurt me!!!! Yes, it did! I had to go hand pick the black berries for this pie and got a scratch on my leg and tons of thorns on my hands!! Great Recipe!! Highly Recommended!!

Almond Apricot Bars

Reviewed: Sep. 12, 2008
Well, I did a bad job following the recipe. I got confused with the directons, and added everything together(not layering). It still turned out tasty, very sweet! I'd like to layer it next time, and use vanilla chips, instead of milk chocholate chips. I did that for my brothers, but in the end they wouldn't even try it. But the bright side was the neigbors, and my brother's gf loved it. And a whole group of roofers ate the rest in a couple minutes! Thanks, this was a good recipe! I will try it again sometime!
