Oranged Cranberry Sauce

Submitted by: Barbara Yoder
This recipe was graciously shared with me by a Jamaican friend many years ago. It makes a delicious sauce, different from any other cranberry sauce I've ever tasted or made. It does not 'gel,' but you do want to cook it long enough to make a good, thick consistency.

The red and green make a great Christmas cookie. Have used other nuts instead of pistachios with success. If your pistachios are salted, omit the 1/4 teaspoon salt from the recipe.

Get in on the fun of cooking with chicken fried in a saltine cracker crust. Potato flakes give that coating a little something extra.

Salad Ole

Submitted by: Christine Johnson
The dressing for this veggie salad takes its cue from the picante sauce that 's stirred into the oil and vinegar and other tasty ingredients. When all the vegetables are chopped and stirred together, this festive dressing is folded in and the salad is chilled until ready to serve. Makes six generous servings.

This is one delicious way to prepare quinoa! Fresh spinach is stirred into a richly flavored quinoa pilaf, and sprinkled with crumbled goat cheese.

Zesty Pita Chips

If you're trying to snack healthier these days, give Katina Tanner's recipe a try. Her crispy pita wedges are a low-sodium substitute for salty commercial chips, and their zippy seasoning is a fun alternative to creamy dips. She bakes batches of her satisfying nibbles in Benton Harbor, Michigan.

This pretty potato salad has great flavor. Goes well with a summer barbeque, or anytime! For a tangy twist, try using plain fat-free yogurt in place of some or all of the sour cream. Garnish with additional sliced hard-boiled eggs, if desired.

Quinoa is a high-protein, good for you grain, it can be substituted for couscous and makes a lovely side dish. This recipe is a crunchy, lemony, healthy dish that can be used as a side or as a light meal.

Easy Hummus

I make this hummus all the time. It only takes a few minutes to prepare, and it's healthier without the oil. Increase or decrease the ingredients as desired, especially the jalapenos! Serve with pita chips or fresh veggie slices. Add more of the reserved bean liquid for a smoother dip.

Best Buckwheat Pancakes

Pancakes just taste better made from scratch, and these are no exception. A mixture of white and buckwheat flour and buttermilk add a special taste and texture. They puff and brown beautifully. Best we 've tasted.
