Baked Oatmeal I

This was really good and the texture was SO much better than plain oatmeal, which I don't care for. The kids loved it as well, and they all like oatmeal. I baked mine right after mixing so I don't know how different the texture would be letting it sit overnight. I cut the calories way down by using applesauce & Splenda in place of the oil & sugar and also used skim milk. I left out the raisins and added about a half cup of chopped walnuts. Next time I want to add a chopped apple or two and a little more cinnamon but it is quite tasty as is.

Honey-Garlic Pork Ribs

These were so yummy! I marinated mine in a ziplock bag for a couple of hours and grilled them. They turned out really good but the grill flared up a lot and they were extra crispy. Next time I think I will pour half the marinade into the crock pot with the ribs to cook off some of the fat, then finish them up on the grill and baste them with the remaining marinade. The kids wanted extra BBQ sauce (of course) but hubby and I liked ours just the way they came off the grill.

Jay's Signature Pizza Crust

I give it 5 stars for taste and 3 for ease to work with, so an average of 4 stars. I upped the recipe to 20 servings so it would make 2 large pizzas. I also made mine in my bread machine. It mixed up well but the dough was very sticky and I ended up having to mix in quite a bit more flour to make it workable. Now I use 1 3/4 cups of water as opposed to the 2 cups called for in the 20 serving recipe and that helps. I have still had to add in a bit more flour but not nearly as much, I could probably cut back a bit more on the water. The crust is very tasty though so it makes it worth the extra stickiness.
