Mild Cheesy Chicken Enchiladas

This was pretty darn tasty! One of my co-workers had brought in enchiladas for lunch and I decided that is what I wanted for dinner. Fairly easy to put together, I used canned tomatoes instead of fresh, and I put the olives and the tomatoes on the inside as well as the outside. I ended up putting the tomatoes and olives in the sauce for the outside, but after making it, I wouldn't recommend that. It worked very well for the inside but the outside had a gritty texture to it. I am not really sure why that happened. I think next time I would just use some shredded cheese on top with some enchilada sauce. Overall this was a yummy recipe.

Pork Loin Chops in Apple Cream

I made this last night, and it was pretty yummy. I changed it up a bit and followed some other reviews. I added some applesauce and used apple juice (no cider on hand) and added some cinnamon. I also marinated the pork before I cooked it, with vinegar, salt, pepper, and garlic. I think next time I will leave out the breading part, as it just made a mess in the sauce for me. I also added some diced apples to the pan before I cooked the chops. Then removed them and added them back in when I added the cream. Overall I think this was a awesome recipe, simple and didn't take all night to prepare. I will try this with chicken as well.

Creamy Rice Pudding

I made this for dessert last nite and it was soooooo yummy! I did change a few things, I didn't put raisins in because my bf doesn't like them, and I used the canned evaporated milk instead of reg. milk. And I too added cinnamon. I will keep making this one!
