Crock Pot Portobello Chicken

I wasn't real fond of this. Maybe it was the dressing. I used wishbone light itallian and it all came out tasting very vinegary. I may try it again but definately pick your dressing wisely. Perhaps a cheesy itallian with less vinegar in it.

Apple Crisp III

This is a very easy and tasty recipe. I am just a beginner when it comes to cooking but I was able to make this and it turned out nice. The only thing I didnt like was the crumbles on top that are too sweet for my taste.

Roasted Beets 'n' Sweets

Well, the verdict is still out on whether I like beets. But this was interesting, to say the least. I liked the flavor of the roasted beets, just wasn't sure about the texture. And since I wasn't sure how soft they should be, I think I overcooked them a bit. Before serving, I crumbled a little bit of fresh goat cheese on top, which made this dish awesome, with melty goat cheese, how can one go wrong?

Coconut Curry Tofu

This was good, but I think using regular coconut milk and regular soy sauce would make it so much better! I'm used to the curry at my favorite Thai restaurant being so much more flavorful and creamy with the coconut.

Grilled Baked Potatoes

These were very good, and an easily adaptable recipe too for different spices. I used new white potatoes, and this cooking method was not long enough. They needed more time boiling or more time on the grill to get them finished. I will make this again though!

Marinated Spicy Pork Chops

This recipes was great. Don't get too caught up on being exact on the amounts!! I added a bit of water to my marinade to thin it down and it was a huge hit in our household. Thinning it usually ends up with more flavor in the meat but not the thick sauce you see in the picture.

Lemon Square Bars

There was no way I was using 5 serranos, too painful! I subbed one jalapeno instead and it was perfect. I also added a clove of chopped garlic. Will make this again!

Minnesota Broccoli Salad

This was the first thing finished at a barbecue this weekend. I had never made a broccoli salad using anything other than raw broccoli, so I was concerned I would mess it up. It turned out perfect! I wish I had made more though, I've already been requested to make it again!

Cabbage Fat-Burning Soup

All the veggies in the soup really appealed to me, but I don't know if I'd make it again. Maybe without the onion soup mix? This was the first time I've ever used that soup mix and it was pretty salty. I also added garlic. If I make it again I'll add garbanzos and some different seasonings instead of the soup mix.

Peanut Butter Muffins

I have to agree with everyone, the method of cutting the peanut butter and cold butter really makes this good and interesting! I wanted to try the recipe as written to see how it was before I modified it. I have a sweet tooth, so my first instinct was yeah, it's not sweet enough. The peanut butter flavor is pretty light too. But overall, I think these were perfect muffins. Nice and light and fluffy! If I made it sweeter, I think it'd be a cupcake, not a muffin. As it was, it was perfect with a chai tea this morning! I think those peanut butter chips would be great in this, as would chocolate chips. If you add more sugar and make it a cupcake, add chocolate frosting! MMMmmm!

Delicious Black Bean Burritos

I wish these were spicier! Next time I'll add the whole jalapeno and maybe a little chile powder as well. I ended up opening my burrito and adding some fresh spicy pico de gallo. Perfect! I will make these again for sure, so fast and easy!

Pork Butt Roast with Vegetables

This recipe is fantastic. My cooking skills rate somewhere below beginner and I am usually disappointed with the results of my cooking efforts but I am a bachelor and I dont think I can eat another microwave dinner so I keep trying. Chicken Noodle Casserole I

Delicious! I substituted the cream of mushroom with plain cream and I poached the chicken in a half/half mixture of water and chicken broth and the chicken just exploded with flavor. This is really a great recipe!
