Spring Salad

I LOVE this salad. I can't tell you how many times I've made this and how many people love it. In fact my friend had a pot luck wedding and when I asked her husband to be what he wanted me to bring, this was his first choice! I can't say enough about how delicious this is. I make it the night before, somehow leaving it overnight lets the flavors blend. I HIGHLY recomend you try this.

Spicy Baked Sweet Potato Fries

These are pretty good. They don't turn out as crisp as I'd like but I don't think you can get that crispness without deep frying. I add cumin to the mix and leave out the taco seasoning but that's just a personal preference.

Shredded Brussels Sprouts

Excellent dish. I didn't shred the brussel sprouts, just cored and then quartered. I think this would be a great dish for people who don't like the taste of brussel sprouts on their own. It has an almost smoky, nutty taste to it. Try it once and you'll love it.

Simple Pork Rib Dry Rub

I use this all the time! It's so simple and so delicious. I not only use it for ribs but also for pork chops, in fact any type of pork would work with this.

Butter-Dipped Biscuit Squares

These biscuits are delicious! I used all purpose flour with baking powder and I cooked them in the butter. I don't think it was too much butter because if there was butter in the biscuits it would be about the same amount. Anyway they turned out crispy on the outside and soft inside. My boyfriend said "now these are biscuits!" so since they are so easy to make, I'm sure I'll be getting more ready soon! Oh Ialso used salted butter which gave them a nice salty zing. (I halved the salt called for with the baking power.)

Mom's Island Treasures

These might be my new favorite cookies! I added a whole cup of butter instead of 7/8 of a cup (because I'm lazy like that) and I also skipped the chopped pecans (see earlier lazy comment). These cookies are so addicting! They were pretty hard to mix though, with all the chocolate chips. Seems like I couldn't get them all to stay in the cookie mix!

Salmon with Lemon and Dill

This is a great salmon recipe. Instead of salmon fillets I used a small whole Coho Jack and wrapped it up in foil to keep it moist. I used all the ingredients except the dill since I don't care for the taste of dill. I also used a teaspoon of minced garlic from a jar instead of the garlic powder. I baked it at 350 for 30 minutes and it turned out great. I will make this again.

French Onion Soup III

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

While these tasted good, they didn't look very pretty. They stayed in little lumps and were so dark on the bottom, even after just 11 minutes.

Grilled Chicken and Portobello Lasagna Rollups

Easy Cheese Ball II

As you can imagine, this makes a LOT of cheese ball. It was very tasty, but be sure to make it in advance. Take it out 30-60 minutes before you eat it, otherwise it's a cheese rock. Made my cheese ball, ranch-loving brother very happy for his birthday dinner!

Caramel Macchiato Cheesecake

This soup turned out great. I found that turning up the heat on the butter-flour-milk helped it thicken up better and I also added a can of corn as another reviewer suggested. Perfect!

Hobo Stew

I have made hobo stew before and loved it. when I learned to make it we would call it poor mans stew. it is a quick and economical meal. but still very filling. I would add a few more spices like italian seasoning.

Pie Crust IV

I only ended up using half of the water listed. Adding one tablespoon at a time, it looked like it was wet enough so I stopped adding water before I ruined it. This was SO easy to work with, a no-fail recipe. I can't wait to make another one now!

Butternut Squash Soup

I only used one package of cream cheese, I felt two would've been overkill. This needed more flavor, garlic, more onions, maybe cilantro? I will try the other butternut squash soup recipes in an attempt to find the perfect recipe!
