Ellensburg, Washington

First settled after the Civil War, Ellensburg is situated near the geographic center of Washington State on the east slopes of the Cascades. Ellensburg was a front runner to be Washington’s state capital, but support wavered after fire destroyed the heart of town, and the bid went to Olympia. Ellensburg’s two major claims to fame are Central Washington University, and the Ellensburg Rodeo a stop on the PRCA professional rodeo circuit. It is also home to some of the largest timothy hay-making companies in the world. The cuisine scene in Ellensburg is influenced by many factors, including the area’s cattle-ranching history and a major state university that draws inhabitants from all over the globe, whose tastes vary widely. To accommodate, the city of over 15,000 supplies an eclectic mix of restaurants, from Ma and Pop diners and authentic BBQ, to more modern haunts offering Asian, Mexican, Greek and Italian fare. Fresh fruit stands operate seasonally, showcasing the world-class fruits and vegetables produced in Eastern Washington.

Corned Beef on Toast

I have to say I was VERY surprised at how tasty this turned out! I served them on open faced toast. The kids gobbled it down much faster then the roast it was leftover from.

I had a jar of dried beef, so I used that. My children 7,5 & 3 gobbled them down. That makes it a keeper for me!

This was good but a little sweet for us. I'd rather just baste with Buddah Belly Teriaki sauce.
