Ultimate Shrimp Scampi

This is the best shrimp scampi that I've ever had! The worchester sauce and the white wine really give it a great flavor. This is perfect for a special dinner for two.

Peruvian Lomo Saltado

Wow, this was absolutely delicious! Imperative that the meat is marinated in the vinegar/soy sauce for at least a half an hour. Like others, I added cumin, garlic and subbed cilantro for the parsley. I used Ore Ida steak fries to much success! I did turn up the heat to almost a broil for an extra 4 minutes at the end to make them extra crispy. Make yourself a pisco sour, and try this recipe, it's a must!

Pumpkin Risotto

I adore this recipe. I am pretty much addicted to all things pumpkin! This had a good flavor and not overwhelmingly pumpkiny. I made a couple of small changes... I omitted the wine and added a splash of vinegar + water. I used more than 1 cup of pumpkin because I had a large already opened can and didn't want to waste. I used dry thyme. And I added a lot of mushrooms.

Sausage and Bean Ragout

I thought the flavor of this dish was quite good, regardless of being worried about the lack of spices initially! Changes that I made was omitting fresh basil because I didn't have any though that would have been delicious; and I used Great Northerns instead of Cannellini's. In the future, I will add an additional can of beans. They were definetely lost in all the meat of this stew.

Portuguese Chicken I

I made this for dinner last night and quite enjoyed it though I made a number of changes! I only used 2 large boneless skinless chicken breasts, and filleted them. Reduced the butter by half. I doubled the amount of garlic. Only used 1 cup of stock. 40 minutes of simmering was far too long for the thinness of my filets. It was basically all gone but left a very small amount of nice thick gravy in the pan. I added a small amount of hot water, then I used maybe only 1/4 cup of half & half instead of heavy cream and stirred until thickened. I sprinkled salt and pepper in the gravy at this point. The results were quite delicious.

Carmel Apple Martini

I thought this was just okay. I would have used less vodka, it was pretty strong tasting. Someone had put apple juice in it, that may tone it down. I don't think I'll be trying this again.

Beth's Spicy Oatmeal Raisin Cookies

These were really tasty. They kind of fall apart, but still taste great. Adding a couple of minutes to the baking time seems to help them stay more solid. As recommended, I chilled the dough before baking. I will make these again!

Apple Crisp II

Great flavors! We put it on spaguetti, I think the bow ties would have been better. I wouldn't change a thing! I didn't give it a 5 because it has to knock my socks off for that. This was just plain good!

Irish Stew

This was quite good and I followed it almost to a "T". I added an extra carrot, doubled the leeks, used 5 cups of water, added the parsnip later as per recommendations here, and I used venison instead of lamb because that is what I had. My fiance and I quite liked it but did have to add some extra salt and pepper on top. It's a great cold-day dish. I served it with potato sage bread and red wine.

Port And Mushroom Sauce Chicken

I doubled the sauce, which was a good thing, doubled the mushrooms, XXXXXX onions (maybe 2/3's a cup, minced?), served over wild rice. Not a huge fan of the tarragon, would have given it a 4 but made many changes.

Sour Cream Chops

We really like this a lot! I used a thinner cut pork chop and halved the cooking time, I need to reduce it even more. But regardless, it was very tasty! I used white wine instead of milk,mushroom soup with roasted garlic, put the sour cream on the meat, that was really good, and put the sauce on pasta. We put parmesan cheese on the pasta. It was all really good! A keeper for us!

Coconut-Apple Cobbler

Wow! This was incredible! THe coconut made it crispy and sweet on the top. I had read a not so good review that said it got too done on the top and the apples weren't cooked, so I sliced the apples very thin and took it out of the oven a couple minutes early. It was perfect! Thanks for the terrifically good and easy recipe!
