Spinach Tomato Tortellini

Reviewed: May 9, 2008
Delicious! This made a wonderful dinner! I chose to make this recipe because it looked so simple, and my husband loves tortellini. I followed all the directions, except that I replaced the tomatoes with a can of Italian tomatos, and instead of dried basil used fresh. I also added some chicken as other reviewers suggested, it added a good extra texture to the meal. Personally I think I would only make this with some cheese tortellini... the cheese seems to help make the dish. But I may try with a different noodle and add some additional cheeses... At any rate I'll be making this a lot!

J.P.'s Big Daddy Biscuits

Reviewed: Apr. 18, 2008
These biscuits were ok, we ate them with butter and jam. I made them exactly as written since I don't believe in rating a recipe if you make changes. They were more the consistency of drop biscuits rather than the roll-out kind, so my hands got really sticky while trying to work with the dough. I had to cut them with a pastry wheel, and even then the dough stuck to it. After they baked they were fine, the problem was the raw dough.

Southern Peach Cobbler

Reviewed: Apr. 18, 2008
This was very yummy! I was having a huge craving for peach cobbler, and after wandering through several recipes decided to use this one. Since I was short on time, I used one and a half large cans of sliced peaches rather than cooking my own. I just poured a little of the juices in the pan. For the dough, I added the cinnamon rather than topping with cinnamon sugar. And I used salted butter, so I omitted the salt altogether. Was very tasty, and not too hard!

Cinnamon Swirl Bread

Reviewed: Mar. 27, 2008
This was very yummy, also very easy. I love the fact that I have all the ingredients on hand, and my husband loved it. The only thing was that I found it was more cake like in consistency than a bread, which kind of surprised me. And, for anyone else who doesn't know better like me, don't just pour a bunch of the cinnamon sugar mixture on top... if it isn't mixed in properly then you just end up with that sitting on top! I ended up with a bit of a mess trying to get it off neatly.

French Baguettes

Perfect! So quick and easy! I don't have a bread machine so I made it by hand following some other bread instructions, and it turned out great! Went perfect with my chicken alfredo. My husband didn't even realize it was homemade until I told him, he thought I had bought it from the bakery! I'll be making this often!

Cream Cheese Squares

Reviewed: Mar. 26, 2008
These were easy to make and quite tasty, but a little hard to eat. When I bit down into one the filling squished out the sides. The kids didn't seem to like them, so I'll have to rate this down a bit. I might try adding an egg to the filling to see if it will stand up a bit better.

Thank you for posting this recipe! I used it as a starting point. Instead of curry I put garlic and rosemary with the lemon, and we used it as a dipping sauce instead of adding it during cooking.

Banana Pudding IV

Reviewed: Mar. 22, 2008
This was by far the BEST banana pudding I've ever had. I made it with all the ingredients and measurements, but lightened up on the fat, sugar and calories just a bit. I used 1/3 fewer fat cream cheese, reduced fat Nilla wafers, fat-free sugar-free pudding and lite Cool-Whip. I used whole milk because pudding doesn't always turn out very well with fat-free or lower fat milk. It's not entirely guilt-free, but not quite as bad for you as it would be with all the extra fat and calories! Thank you for sharing this wonderful recipe.

Monkey Bread I

Reviewed: Mar. 21, 2008
A wonderful treat! I had an extra tube of biscuit dough in the fridge, and was trying to decide what to make with it when I found this. I scaled the recipe down to five servings, but doubled the topping and poured it between layers. it all fit perfectly into my smaller loaf pan, which I think may have also helped it cook all the way through. My husband and I had to stop ourselves from eating the whole thing in one sitting!

Irish Soda Bread

Reviewed: Mar. 20, 2008
This bread was delicious! I had needed to make something for a St. Patty's Day potluck, and an attempt at cookies failed so I needed something quick and easy. This was perfect! Couldn't have been simpler, and the end result was tasty. It was best toasted with butter, but was still good on it's own. The only difference I made was to omit the raisins, since I kept hearing that real soda bread doesn't have them, and I also omitted the caraway seeds, since I read that a lot of people don't like them. I split the batter between two 7x3 inch pans since that's all I had. End result was delicious... it disappeared! >>>>> UPDATE: This was so good I had to make more, and kept it around as a snack bread. It was so tasty toasted with butter! I had promised the second loaf to my mom, and was so sad to let it go! lol

Slow Cooker Swiss Steak

Reviewed: Mar. 16, 2008
I followed the basic ingredients and measurements for this Swiss Steak but was too lazy to sear the meat or shred the carrots. I put the veggies in the crock pot, then the meat chunks, threw in the seasonings and flour and gave it a stir. It turned out great! Thanks for sharing your recipe.

Frosty Orange Pie

Reviewed: Mar. 13, 2008
This pie was AWESOME! I made it just as written. There wasn't too much filling because it is the type of pie that is supposed to be mounded in the pie shell. For anyone who wants to make it, I'd recommend NO changes. Great recipe!

Black Magic Cake

Reviewed: Feb. 29, 2008
I also got this recipe off the Hershey's cocoa can, around 1970-1972. I got a blue ribbon at the fair with this cake! I recommend if your hands are shakey that you put your pan on the oven rack, then pour in the cake batter. It's thin, and if you're not steady it can slop on the sides.

Ensalada Roja con Pollo (Red Salad with Chicken)

Reviewed: Feb. 15, 2008
I personally would not cook the potatoes and carrots together, because they may cook at a different rate. I would also cook them whole (potatoes with skins on), then peel/cube/dice when they are cold, but that's just how I like to do it. To prepare the beets: cook a whole, unpeeled large beet (or a couple small) in water until it is tender when pierced with a fork. Drain, rinse in cold water, and peel it when cold.

Soft Sugar Cookies IV

Reviewed: Feb. 11, 2008
These didn't turn out well for me. I did as I read a couple other people did, which was using all butter rather than half shortening. Maybe that made a larger difference than I thought it would, because these turned out really like a flour-butter mixture. The first couple of cookies I forgot to flatten out, and they turned out slightly doughy in the center, which would have been ok but the flavor seemed sort of off. The rest I flattened, but didn't do much for the texture. My husband loves sugar cookies but didn't like these. Sorry, but I won't be making these again.

Easy Clotted Cream

Reviewed: Feb. 8, 2008
I found a recipe like this last year but it was called Mock Clotted Cream, which would be a more acceptable title for the purists out there commenting it's not clotted cream. Even though it is not true clotted cream, it did go well with lemon curd and scones.
