Cream Cheese Pound Cake III

I don't know if I would call this cream cheese pound cake although its a pretty good pound cake. I couldn't really taste the cream cheese in it...When it says a heavy and dense pound cake they are not lying...This thing weighed a ton. Good flavor, although I ended up with some type of strange crunchy crust on the top, not sure where that came from. I scraped it off and the actual cake was somewhat moist although not as much as I thought it would be. I did add additional vanilla along with some lemon and almond extract. I don't think I'll make this again. It was a lot of work for something not quite as moist as I wanted it...

Spiced Applesauce Bread

I wasn't too impressed with the way this bread turned out, so next time I will use the suggestions of "MommyfromSeattle." She used all brown sugar, doubled the spices (I already did that and still think it needs more) and throw in some diced apples. I think that should do the trick. Raisins and walnuts would be a nice touch as well.

Scrumptious Frosted Fudgy Brownies

If you like really rich, really sweet brownies you'll love these. I thought I couldn't get enough chocolate but boy was I wrong these were decadent! Mine didn't set well but that was my fault, I baked in a smaller pan and they began to burn on the edges...I'll stick with my normal recipe...

Oatmeal Pancakes II

These pancakes were easy to make and tasted really good! I used regular milk and only 1/4 tsp. baking soda. I added dried cranberries and my 4 yr old daughter LOVED them, and so did I. I thought they could have used some cinnamon, so next time I will add that.

Pepperoni Pizza Muffins

these are very quick and easy to make, but they just aren't very good. They turn out a funky orange color, and are far too moist (all the fat in the cheese and pep doens't help). They aren't horrible, but I wouldn't make them again. Glad I was just trying to use up ingredients!

Peanut Butter Cup Cookies II

I made these for an event and had to make far more than anticipated, mychildren, and then their friends, and then surprise visitors kept eating them. I did find that they would not bake well in a muffin pan, so I switched to cupcake pan. THESE cooked properly.

Zucchini Cake II

This cake wasn't bad; just okay. It didn't have much kick. Cream cheese frosting did make it taste better, but I probably won't make it again. Thanks anyways, my daughter and I had fun making it.

Mango Salsa

I made this with a mango that was a bit soft, but it still worked. This was really spicy though. The next time I will use a fresher mango, only add 1/2 the jalepeno pepper and maybe add some fresh pineapple chunks to sweeten it up a bit. I put a bit over a piece of Mahi Mahi and it was great. I used it as a salad dressing (similar to how I use regular salsa), but it lacked flavor, so over meat or with chips is great.

Cream Cheese Frosting II

Great recipe for ultra cream-cheesy frosting. I cut the recipe in half and found that just 1 cup of sugar worked perfectly. I did add a splash of lemon juice however, and that just makes it perfect! I don't care for frosting in general, but this was a hit. I used it on a cinnamon swirl cake, just the right amount. I had no trouble with it being to thick or to thin, just right!

Stuffed Pork Chops with Gorgonzola and Apple

I made this one night for my boyfriend and he loved it. To cut out a few calories I left off the sauce (just seasoned with salt and pepper) and added turkey bacon to the stuffing. It is one of his and my favorite meals. Plus it is really quick. It goes well with a baked baby potatoes and fresh steamed green beans. Any leftover stuffing that won't fit in the chops can be saved and used as a salad topping for lunch the next day with some walnuts added.

Easter Lamb Cake II

Let me start off by saying how much I HATE making an Easter Lamb Cake every year--It falls on me because I have the most baking experience in the house, and I hate doing it because of how delicate the lamb is. This recipe is a godsend, however, because it comes out as a nice dense pound cake like lamb that is perfect for frosting and decorating. It just got out of the oven and was unmolded PERFECTLY. Maybe, one year, doing a Lamb cake will be fun again! Until then, I am very pleased to have this recipe to work with.

Ramen Cabbage Salad

Made this last night, it was great. I didn't have any cabbage, so I thinly sliced 3 romaine hearts and mixed with half a bag of mixed salad greens. The dressing is perfect, esp if you add a touch of seasame seed oil. I also added mandarin organges and seasame seeds to the salad. Great with grilled teriyaki chicken.

Slow Cooker Honey Garlic Chicken

Soooo good! I used chicken breasts instead of thighs and it was so yummy! The chicken just fell apart (in a really good way) and the pineapple chunks and sauce was delicious on the rice! Will definitely make again!
