Bellingham,Washington is within reach of just about anything anyone might want. Mount Baker offers mountain sports while lakes, rivers and a bay indulge water enthusiasts. Its downtown is coming back to life after a new mall nearly killed it in the mid 80’s. Historic Fairhaven satisfies that craving for cobblestones and brick, and the city’s waterfront is something to gawk at. For those who need the occasional taste of the big city, both Vancouver, B.C., and Seattle are within 80 miles, north and south respectively. Overall, residents have an appreciation for local foods like fresh seafood from the areas waters or lush produce just plucked from a nearby organic garden. The restaurant scene is eclectic and contemporary but remembers its traditional roots. Whether it’s Italian, Asian, Mexican, Spanish, Greek, or American (Northwest-style), there are several restaurants that do it exceptionally well with their own twist. Hungry, but not sure where to start? Just head downtown or to Fairhaven—you can’t go wrong.

Award Winning Soft Chocolate Chip Cookies

I've made these cookies 6 times now and everyone LOVES them, I've never had a negative comment. My favourite way to make them is with half chocolate and half white chocolate chips. And definately add the nuts! I also take the other cooks' advice and add 2 TBS of vanilla and 1/2 tsp of salt. I always add french vanilla instant pudding. I bake them for 10 1/2 minutes and they come out just the way I like them. The only problem I've had was making the cookies too small, bigger is better with this recipe!

Banana Cream Pie Made Easy

Very delicious pie! Made it for my step-dad's birthday and he absolutely loved it. Didn't use the ice and used a half a cup of milk because the filling is VERY thick! The milk makes it a little sticky.. but its easier to spread.. great recipe!
