Ginger Snaps II

I bought some rose water and really wanted to make cookies with it...so I used this recipe as a base. I used all butter instead of shortening. I exchanged the molasses for light corn syrup and added 1 tbs of rose water to the butter cream mixture. I changed the ginger and cinnamon for 1 1/2 tsp of cardamom. Viola! Cardamom Rose Snaps ;)

Spooky Witches Fingers

These are a kick and so easy to make and "assemble" (if you can call it that!) Great flavor and texture as I took a hint from another Reviewer and tasted the dough as I went along; and also added the flour in stages to keep an eye on the consistency. "Skinny" means SKINNY, people - best to use your pinky finger as a guide and then, perhaps a little less width depending on the girth of your finger. Ha! Great, great, great recipe, Sandra ... thanks so much!

Spiked Fall Cider

This was very good. I adjusted it to serve 18 and made it in the crock pot. It was sweet so you wouldn't want more then a glass or two. I used 2 cans of apple juice concentrate instead of cider and added extra spices. It was perfect and I saved myself $5 which is always good.

Country Apple Dumplings

These are amazing. Of course, what wouldn't be amazing with a cup of butter? I suspect that you could cut down on the butter and sugar in this recipe and still get a great result. I will try that next time. I also used 7-up instead of mountain dew and I believe it didn't change the outcome of the recipe. This will be my go to recipe for apple dumplings from now on, without a doubt!

Vini's Pork Roast

I loved this simple and delicious rub! The caraway was a welcome departure from the spices I typically use and was a beautiful compliment to the pork. The cooking directions were spot on and it was so nice to have gravy and potatoes. So often I cook meat and potatoes but don't have the drippings for gravy.

Homemade Peanut Butter Cups

I've made peanut butter cups several times, always using different recipes. I assumed I'd like this recipe, with the graham crackers, better, because of the texture--but either I didn't crush the crackers finely enough or I don't like texture. They were a bit too gritty and unmixed-seeming for me. (In other words, I prefer the really simple recipes that don't call for graham crackers.) On a positive note, I used organic peanut butter (Adams creamy) and had no problem with runniness. I kept them in the fridge, though.

Autumn Cheesecake

This was great! Aside from using neufchatel instead of regular cream cheese, I didn't really mess with this. I did follow other reviewers' advice and used one and a half times the ingredients in the cake section (i.e. 3 8oz packs cc, 3/4 c sugar, 3 eggs, and extra vanilla) and also added a simple crumb topping (flour, butter, brown sugar), which I poured on with about ten minutes left of bake time. It came out really well--the apples were tender and not oversweet, and the crust was perfect--neither too thick nor too thin, too wet nor too dry. I may have undercooked the whole thing slightly, but even the gooey center tasted great. We also noticed that this improved with time--that is, it was good the first day, but even better the next. (So make it a day ahead of time if you can.) This is a pretty simple recipe that turns out a wonderful product. I'll definitely make it again.

Butternut Squash Soup

I made this last night, and was just a little disappointed. I used one package of cream cheese, but I used the Neufchatel cheese instead of full-fat cream cheese, and the soup isn't as creamy or rich as I was hoping for. Next time I'll just go for the fat. :)It WAS really easy to make, though, which was great. I roasted the squash in the oven for a while before peeling it and cutting it up, which made it easier. Thanks for the recipe!

Canned Apple Pie Filling

I upped the spices and replaced 8 cups of the water with apple cider. All of my quart jars overflowed even with well over a 1/2 inch headspace! I repacked the filling in pint jars, left an inch of headspace, and reprocessed the jars.

Chicken Cordon Bleu I

This was delicious. I don't think I've ever made Cordon Bleu before and glad I tried it! I made with seasoned bread crumbs and my chicken breasts were so stuffed toothpicks couldn't hold them together! baked after browning in hot skillet to finish cooking and made the sauce that another recipe had with crm of chicken soup & sour cream in it and it was wonderful with the chicken..loved it for lunch the next day! will make this again for sure!

Potato Leek Soup I

I LOVED this dairy-free version of potato leek soup. Since I had no white wine, I used red and that worked out well. Instead of blending them, I mashed the potatoes in the pot with a potato masher. I ended up also mixing some beet greens and kale that I had previously sauteed on the side, and they went very well in the soup.

Rosemary Ranch Chicken Kabobs

omg was this the bomb! Made this one night because it sounded easy, fast and with ingredients on hand and am I ever glad I did. I used chicken breasts and didn't make them into kabobs but kept the rest as is. So, between me, hubby and 10 yr. old son, we all loved this marinade so much! I seriously will make this often and that's saying a lot since we all know how many recipes are out there for chicken. The BEST flavor that you literally taste on the meat...mmmm mmm so good!thanks for sharing!

Creamy Rice Pudding

Wonderful Recipe! I ended up adding an extra egg yolk, mainly because I was using egg whites for a different recipe and didnt want to waste it. The result was a little more custard like taste while still maintaining the rice pudding consistancy. This was my first time making rice pudding and I was very happy with the way it turned out.
