Portland, Oregon

The City of Roses is known globally for its progressive urban planning – highly networked public transportation, integrated city parks, and sustainable mixed-use neighborhoods. Hometown to the creator of the Simpsons, visitors might recognize street names as inspiration for the show's characters – Flanders, LoveJoy, Quimby, Terwilliger, and Burnside. While Portland offers all the amenities of a flourishing city, it is the surrounding landscape and natural resources that bring to life the culinary flavor. A variety of berries, mushrooms, fish, duck, emu, and smaller game animals find their way into savory dishes and onto seasonally changing menus. Paired with local micro-brews and world-class pinot noirs, such abundance is best complimented with outdoor activities and neighborhood walks. If visiting in the summer, be sure not to miss the Saturday Market (open Sundays too). Discover the assortment of handmade crafts by regional artisans and treat yourself to an "Elephant Ear" classically prepared with cinnamon and sugar.

About me:
I'm married to a wonderful man who has nine terrific kids, a gorgeous daughter-in-law and a strikingly beautiful granddaughter - and I have one daughter, so between us ... holy cow - there's hardly a month that goes by without a birthday! None of the kids live at home anymore, but we see them on holidays, birthdays, and such. My husband is a popular Internist and we have a beautiful yet ever-changing-and-in-a-state-of-remodel home. Two cats, Chloe and Busy, even out our empty nest along with "Nitschke" ... our 1.5 year old Pomeranian/Australian Shepherd mix of a pup. The name was my husband's idea ... coming from Wisconsin he's a huge Green Bay Packer fan. If that still doesn't strike a chord for the name, ask your hubby or boyfriend if they've ever heard of Ray Nitschke, former linebacker for "The Pack."

Easy Bacon, Onion and Cheese Stuffed Burgers

Reviewed on jul. 4, 2009 by janine
These tasted great. They were easy to make but I wouldn't say it was quick. By the time you fry the bacon and prep and cook everything, it can take time. I think we spent about 50 minutes from start to finish including the grill time. They were definitely a crowd pleaser.

Quick Pasta Sauce

Reviewed on jul. 4, 2009 by janine
It's hot today and I didn't want to spend a lot of time cooking. So I thought spaghetti! Of course I had no pasta sauce. I found this recipe. Of course, I did not have a 28 oz can of crushed tomatoes. I did have a 14.5 oz can diced tomatoes pre-seasoned with basil and garlic. So I substituted that and used a few leaves fresh basil since I grow it. Tossed with the pasta and sprinkled with Parmesan. It was yummy and no one noticed it wasn't the typical sweeter taste of a store bought sauce. And it was ready in less than 15 minutes!

Instead of Rosemary used Pampered Chef Dill seasoning. It was fab!
