Hearty Hamburger Soup

Oh so yummy! My Mexican husband raved! Instead of the can of diced tomatoes I used Ro-Tel diced tomatoes with cilantro and lime juice. I also used all broth, no plain water. Will make again and again!

Pumpkin Casserole

This was delish! The only thing I did different was put mini marshmallows on top for the last 10 minutes of baking. It reminds me of pumpkin pie without the crust! Will make again :)

Eggnog Bread

I know, I kinda hate it myself when people modify a recipe so much, but here's my rendition: only had 2 1/4 c eggnog left, so I made up the difference with whole milk, added another egg, since some other reviews said it was dry, doubled the nutmeg, and added 2 t. rum extract (per a different eggnog bread recipe here), and I left out the apricots and pecans and totally forgot about the icing. Turned out pretty good! :) Would make for some yummy muffins!

Slow-Cooked Orange Chicken

Eh... this was okay. Didn't have mushrooms, and used a handful or two of chopped onion. Probably put in too much celery, but I wanted to get it used up. I think the sauce was great on brown rice, and the chicken had a little bit of a tangy taste. My husband didn't know it was supposed to be orange chicken, so it's not THAT strong. He didn't care much for it. Our two little boys liked the chicken, but not the rice and sauce as much. Probably not making this one again--there's another orange chicken recipe on here that I might try.

Slow Cooker Lemon Garlic Chicken II

Good stuff. Added a splash of white wine to deglaze the pan, then added about 1 1/2-1 3/4 cup water. Had to thicken up the sauce on the stove, but still worth it. Chicken nice and tender--loving my crockpot for that!!

Slow Cooker Italian Beef for Sandwiches

YUM! I used a very lean roast. I used beef broth instead of water. The last hour of cook time I put in red, orange, yellow, and green bell pepper slices and sliced fresh mushrooms and onions. I served it on toasted buns. It would be great with some Hot Italian Giardiniera!!!

Chili Rellenos Casserole

VERY GOOD! I followed the recipe exactly (except I used enchilada sauce) and it needs more chilis. I say get 4 cans not 2. It didn't fill up my 9x13. We ate it with corn tortillas and sour cream.

OMG! These were the bomb! I used Sierra Mist instead. I didn't have any Mt. Dew. Next time I'm going to spinkle the crescent rolls with cinnamon sugar before I roll up the apple slice. I served them hot over a scoop of vanilla ice cream. To make them truly sinful squirt caramel topping on top!

Fluffy White Frosting

WOW! This was wonderful! I made it exactly as written, and it turned out fantastic. It went perfectly with my lemon cake (which, I might add, wasn't anything special - just a mix). It fluffed up so beautifully, and held it's shape without needing to be refrigerated. Thank you for posting!

Aunt Teen's Creamy Chocolate Fudge

I would have given this 5 stars, but, like most recipes for fudge, this one is tempermental as well, even if you follow it exactly. I've made it twice, once it turned out hard and dry, the second time, it was smooth and creamy. It's hard to say what the difference was between the two batches, but I suspect cooking time is the real key. Knowing when to start your 5 minutes I think is the real issue - when my best batch turned out, I started timing not at a full rolling boil (which would have scorched my pan) but when there was a good number of bubbles visible. Following other suggestions, I cooked it for about 6 1/2 minutes, not 5, and it turned out perfect. Note - I used a candy thermometer on both batches and neither one reached the 'soft ball' stage on the thermometer. The temperature of the pan is difficult to guage too, I was working on a gas range with a setting of only about 1 1/2 on the dial and it was almost too hot. Fudge is a tricky process, even for an 'easy' recipe, so just keep trying if it doesn't turn out, and keep a note of what you did before so you can make a little change or two next time. Remember the final flavor of this recipe depends heavily on the brand of chocolate you use - buy the best you can afford for the best taste.

Marshmallow Fondant

I have been using marshmallow fondant for years and it is hands down so much better than the store bought stuff. Cheaper too!! I like to use my kitchenaid fitted with the dough hook to do the kneading for me.I spray the bowl with pam, dust it with powdered sugar and put about a cup in the bottom then add the marshmallow mixture. While mixing on low speed I add the rest of the sugar and let it do it's thing. It is still sticky and you have to work with it a bit but the end result is worth the effort. It keeps for weeks in the fridge too.

Garlic Chicken with Orzo Noodles

This is such a great recipe! The variations are only limited to your imagination! I used 3 parts chicken broth and 1 part water to cook the orzo. I had a leek that needed using so I sauteed it with the chicken. I didn't have spinach so I used arugula (YUM) and I added a fresh diced tomato for color and topped with a little shaved parmesan. This dish is light and packed with flavor. Can't wait to try it with shrimp. Great recipe, will use again and again.
