No More Salty Easter Ham

Apple Pie by Grandma Ople

I changed it around a bit, but it was still the best my family has ever had. I've made 2 of these, one with honeycrisp apples and 1 with gala. Honeycrisp was by far the best, but at almost $13 for 8 apples, we wont make that too often. I also put the apple slices in a freezer bag and tossed in about a tbsp of cinnamon and vanilla and shook it up. Oh, and if it hasn't been spoken before, use one of those apple slicers you find in the kitchen gadget aisles. Cut down on the whole coring and slicing bit.

Fruit Leather

Ok, I was a little unsure of this one, but it is awesome (which is good since there is a lot of cutting and peeling involved). I did learn a few things along the way, but I will certainly make it again and am excited to experiment with other fruits...I was happy this called for apples and pears as I had a bunch from my in-laws trees. First, I will admit that a blender DOES NOT work. I don't have a food processor (which I think would be the best to use) so I used the fine grater on my KitchenAid after chopping up the apples and pears. The texture was probably courser therefore the finished product looks different from store bought fruit leather, but the taste is terrific. I had some very ripe pears so I actually only used 1/4 of the sugar and honestly only did that because I had measured out the whole amount, started to pour and had second thoughts...this could be made without the sugar and you wouldn't miss anything. Oh, one more bit of advice. I wasn't sure how thick the fruit should be spread out. I spread it out as thin as I could without leaving holes and when it was finished drying there were areas that ended up looking lacy and turned a bit crispy. This wasn't bad, but just not the idea that I had for what fruit leather should be.

Very moist and tasty, even though I mixed up the amounts for the baking soda and baking powder...cooking with an 18 month old can be a little distracting! :)

French Salad Dressing

If I can get my husband to say a dressing is good and it isn't his favorite store bought ranch than that means the dressing is awesome! :) I did use less oil and more ketchup though.

Baked French Toast

Hasty Chocolate Pudding

Amazingly easy and super yummy...I did add the salt and butter after tasting and it does improve it nicely. Definitely a keeper, especially since I am trying to get away from buying prepared foods and miss the pudding in the box (not any longer though)!

Baked Flan

Amazingly good and amazingly easy. Friends and family keep asking for it to the point I had to try and make it lower fat if we were going to keep eating it! I have successfully made it using whole milk in place of the cream (i.e. 3 c of whole milk)and didn't really notice a huge difference. I will continue doing it this way from now one and not feel as guilty! :)

The Best Banana Bread

Very good, very easy...just not sure I would call it the BEST. I think it was a little dry, but maybe the bananas I used weren't ripe enough? I will keep this recipe on the back burner and see if I can't find another that is a bit more moist.

Chicken Wing Dip

This was really good and really easy to make...I will take an empty dish as a sign that others agree! I used Crystal Hot Sauce since we like to use it when making real hot wings. I was afraid it might be hotter so I used 1/2 C and it seemed to be just the right amount of zing! I do think that the next time I make it I will either mix the cheddar in or leave it out since as the dip cools it makes it hard to manage.

To Die For Blueberry Muffins

Really yummy! I love a easy recipe that is this delicious. I made these to take for a camping trip and they were really good even a day old. I will however make less topping next time...made about twice what I needed so I am going to make another batch tomorrow, but using some blackberries we just picked tonight.

Snickerdoodle Cake I

My boyfriend loved the cake. I changed the recipe up a bit, for his happiness and per other reviews. I used butter instead of crisco. I added 1 1/2 tsp cinnamon to the flour mixture. 1 tps vanilla to the egg mixture. I cooked the cake in 2 round cake pans. I doubled the cinnamon sugar topping, used half on one side of the cake. The other half I turned into a struesel with 2 TB brown sugar, 1 TB flour and 2 TSB cold butter. While the cakes where still cooling, I poured 1/4 cp melted butter over each half. I stacked the cakes with the topped sides in the middle and frosted the whole cake with store bought vanilla frosting. It turned out excellent.
