Oregon lies at the heart of the Pacific Northwest. The Beaver State has a long coastline along the Pacific Ocean; the Columbia River forms three-quarters of Oregon’s northern border with Washington, and California and Nevada border Oregon to the south. In November, 1805, Lewis and Clark reached the Pacific Ocean, having followed the Columbia River to where it empties into the ocean near modern-day Astoria, Oregon. Upon seeing the Pacific, Clark wrote in his journal, “O! The Joy!” For certain, Oregon has physical beauty to spare, from the coastal shores to the towering Cascade Range to the pastel desert of Hell’s Canyon in the Northeast. The Beaver State is also a bountiful place, with crab, salmon, fresh fruit (berries, pears, plums, and cherries), local wines, hazelnuts, and foraged mushrooms making up the short list of important foods. For Oregonians, eating local is easy…and delicious. It’s no surprise that Portland, Oregon, is a major force in advancing West Coast cuisine, with its emphasis on fresh, local, organic, and sustainable foods.

Homemade Albondigas Soup

Pretty good soup...I added some fresh bread crumbs to the meatballs, although they still almost fell apart. I left out the celery but otherwise followed the recipe. As others suggested, I made Mexican rice as a side dish (which I added to my own bowl of soup and liked the soup a little better).

PJ's Sweet Potato Mash

these were fantastic. i didn't bake them in the oven though. i just peeled them, cut them in to cubes and then boiled them for about 15 minutes. then i went to step 2. i was very skeptical about using horseradish but it made the dish. they are so tasty. i served them along side the brown sugar meatloaf from this site and some broccoli. i think i like these better than regular mashed potatoes.

Bacon Wrapped Water Chestnuts II

This was pretty good. I used tapatio for the chili sauce since I was clueless about what kind of chili sauce to use since there are so many different types of chiles out there. I mean "chili sauce" is a pretty ambiguous ingredient. It could mean anything, so I used tapatio. Was anyone else stressing about what kind of chili sauce to use? I almost didn't make this because I didn't know what the hell "chili sauce" meant. Anyway, it turned out good. Next time I'll try it using miracle whip and some other random sauce with some kind of chile in it. I precooked the bacon halfway before wrapping the chestnuts. I think it helps the chestnuts keep their crunch while in the oven. And of course the bacon gets crunchier sooner! Anyway, I'm going to serve this to my boyfriend some time... while he's stoned. Excellent scooby snacks.
