About me:
I live in the beautiful northwest with my two dogs, Nikko, an australian shepherd and Sophie, a border collie mix. I recently graduated with an M.A. in International Studies. For the past 2 years I've been working for Mobility International USA, a nonprofit organization whose mission is to empower people with disabilities to claim their human rights. I am the project coordinator for our development programs abroad. I feel so fortunate to work with such passionate and talented people. When I'm not working I am doing something Salsa related. I'm either teaching a salsa class, practicing with my dance team, traveling to other cities for Salsa events, or going out salsa dancing at the local clubs. Life is good!

Chicken with Stuffing

Oh my gosh! This was Thanksgiving in a crockpot!! I did follow the advice of some other reviewers and added an onion and some celery along with some seasonings. S & P and poultry seasoning. I used the cornbread stove-top stuffing but mixed with low salt chicken broth to cut the fat. I cooked on low for 4 hours and it was perfect. Served with some cranberry sauce along side and some fresh cooked vegetables and it made a Sunday dinner feel like a holiday. Loved it!

Pork and Pepper Stir Fry

I used this recipe mainly for the marinade and reminding me to use chile paste. The meat was very tender but I did keep it in the marinade overnight and the next full day. I added lots of veggies and it was great!
