Soft Sugar Cookies IV

I was looking for the perfect sugar cookie recipe to compliment my homemade Jams & Jellies. This was it! I used my cookie press, made a small indentation in the center, and added my peach, apple, blackberry, loganberry, pear and cherry preserves. They are even better the second day! So soft and chewy... When I used my spiced preserves, I even added a little cinnamon to the mix to accent the spices, YUM! Thank you Laura, for such a great recipe!

Prosciutto Wrapped Asparagus

I peel and blanch the stalks... do the ice bath etc.. one thing I do differently is use a good soft goat cheese. I use only enough proscuitto to wrap the stalk with one layer. Spray with olive oil and run it under the broiler to crisp and shrink the meat to the stalk. I serve them room temp as appitezers and warmer if they accompany a meal.

Roasted Red Pepper and Tomato Soup

My family loved this recipe!! I didn't have fresh tomatos so I used canned and I smashed them the best I could and it came out like a chunky tomato which my husband loved. This tasted like a gourmet soup. I loved how roasted red peppers added great flavor. My kids loved this too.

Beef and Bean Chimichangas

My husband loved these. He really enjoyed it for lunch the next day and shared it with his co-worker who was drooling over the smell. I will make these again. My kids even ate them. So much better than frying them.

Sesame Chicken Strips with Sweet Sauce

Baked French Fries II

I have been looking for a french fry recipe and this is by far the best. My husband agrees with me and he's picky. My kids all ate them. The only thing I did different was add the ingredients to a gallon zipper bag and coated them that way. They were very good.

Zesty Slow Cooker Chicken Barbecue

This was great. I didn't have BBQ sauce so I made the Buzzsaw's BBQ sauce and it was wonderful. My in-laws came for dinner and loved it. Will definately be making this again.

Zucchini Bread IV

I made this recipe with 1/2 cup of oil and 1/2 cup of applesauce to reduce the oiliness. The crumb topping is good. I think it made too much as I only used half of it, and I used an additional tablespoon of butter so that it would hold a crumb texture. My friend Dave said that he likes it with mini chocolate chips, so I added that to my loaves as well. I also toasted the walnuts before adding them to the batter.

Spinach Noodles

This has to be good when all 3 of my kids eat 3 helpings. I thought that the spinach flavor was strong but my family enjoyed it and it went well with homemade alfredo sauce and focaccia bread.
